I would use the double boiler chocolate can get sour if you over heat it. You will have MUCH more control with the pot

Re: NEED HELP WITH MELTING CHOCOLATE FOR LOLLIPOPS...
you can use a spoon.. do one spoonful and lightly shake the mold or tap it .. let it settle before you pour more ( if more is even needed) ** make sure the chocolate is melted and smooth but becareful not to put in the microwave too long b/c it can burn easily

Re: NEED HELP WITH MELTING CHOCOLATE FOR LOLLIPOPS...
I made like 20 lbs of chocolate for V-day and did it all in a double boiler. For some reason the consistancy is not that same as the microwave. It dosnt seem to ever get as soom as doing it on the double boiler. It really dosnt take that much more time in the double boiler either. Just make sure the first thing u do is put the chocolate in and then do evertyhing else. Get ur molds ready and clean out a shelf in the fridge and with 10-15 min you should be good to go.
Good Luck FM me if you need help.

Just a tip for putting the chocolate in the molds- I use a ziploc bag and cut the corner off- just make a little hole, it is so much easier to control that way. You just squeeze the bag.

Re: NEED HELP WITH MELTING CHOCOLATE FOR LOLLIPOPS...
I usually melt the chocolate in the microwave. I just put it in for small incriments of time and mix in between, until it is melted smoothy. I also put the chocolate in the molds with a spoon. Make sure you tap the molds on the counter to get out all the air bubbles, before you cool them. I put the molds in the fridge for a few minutes to cool quicker. When they are thougroully (sp?) cool, they will come out very easy from the molds. DO NOT try to force them out, they may not be cool enough. Good Luck! Everything will turn out great! YUMMMMMMMMMMMMMY!

Re: NEED HELP WITH MELTING CHOCOLATE FOR LOLLIPOPS...
I made a ton of chocolates for our eparty favor. It works in the Microwave, or even if you float it in water that's on the stove. The easiest thing to do is buy those craft bottle things to squirt the liquid chocolate into the molds.
