I would suggest searching through the good old yellow pages. Or white pages too. A lot of these places are run down unfortunately, so you should see them before you book anything. I went to a few that were kind of drabby but I went to the VFW in Farmingdale which was pretty decent.

I know you mentioned in Lindenhurst but the Knights of Columbus in Port Washington is really nice.

I've never been there, but I've heard that the one in Seaford is nice. I think it's a KOC.

I have been to parties and weddings at the Knights in both Seaford and Bellmore. Both are really nice. I believe they are all in the phone books, just give them a call for info.
