Churches are worse than catering halls, they r like wedding factories, I swear!!!!!!!! I just discovered this when I arrived a half hour early to my friends church and when we got there another wedding was still in progress!!!

Honestly, I would leave it at 3pm. I know it's a bit of a gap but you have to factor in a receiving line and everything and maybe some pictures outside the church so you are going to want that extra 30 mins.
We ahve the same situation as you - 3:00pm church start and 7:00pm CH start. We figured it would give us enough time in between to do pictures and for our guests to go and check in at the hotel before hopping on the shuttles to get to the RH for the start of CH.

don't worry about what your guests are going to do in between. They will figure it out. I have been to plenty of wedding with a large gap and either went home or to a bar.
