we guaranteed 150, we expect to be 100 people over that. I didn't know you can renegotiate. How would one go about that?

Not sad at all! I feel the same way, every time I try and scale back my list I get so sad - it's once in a lifetime you want everyone there who means something to you
Especially our situation, I feel like at our wedding everyone is going to be like 'FINNALLLYYY!!!'
and I want all the people to be there who have been through the ups and downs with us over the past ten year!

we called them and they said no problem.... it probably wont change the price.... but they said we could do more add ons
