I also made this today, and am serving it for dinner (of course I had samples all day, and I LOVE IT!!!!!!)
1 Tablespoon Olive Oil 1 Cup Chopped Yellow onion 1 Tablespoon Chopped Garlic 1/4 Teaspoon Kosher Salt 1/8 Teaspoon Freshly Ground Pepper 1 Jar (26 Oz Spaghetti or Marinara Sauce, the cookbook recommended Newman's Own, which I used...or Muir Glen) 3/4 Teaspoon Sugar 1/4 Teaspoon Dried Oregano 1 Tablespoon Unsalted Butter 2 TAblespoons Chopped Fresh Basil
Heat the olive oil in a medium heavy-bottom saucepan over medium heat. Add the onion, garlic, kosher salt, and pepper. Cook, stirring frequently, until the onion is soft and traslucent (5 - 7 minutes). Add the prepared spaghetti sauce, sugar, and oregano and simmer for 10 to 15 minutes. Stir in the butter and basil. Taste and adjust the seasonings. The sauce will keep, covered and refrierated, for 1 week. The flavor improves over time.
To spice it up also try adding: 1/3 cup drained roughly chopped sundried tomatoes packed in oil
1/3 cup pitted roughly chopped kalamata (black) or picholine (green) olives
