This is a favorite in my family...when the zucchini and tomatoes are fresh from the garden!
In a large saucepan, add 2-3 tablespoons of EVOO, a small diced onion and a few finely chopped cloves of garlic. Saute several minutes until the garlic/onion have sweat out.
Add 3 cups cubed fresh zucchini (skins on) and 3 large tomatoes coarsely chopped. Simmer several minutes.
Add a small can of tomato sauce (I use Del Monte) and a 1/2 can of water. Add salt/pepper and fresh basil to taste. Simmer 2 hours. The sauce will thicken as the zucchini breaks down. Serve over your favorite pasta and sprinkle w/parmeasan cheese.

Do you ever make the squash that looks like a bat?? I cant remember the name of it but I really love that one too!!
