Gardenia theme needed for wedding

My wedding in September 2006 on the east end of LI and I would like to use gardenias as the central flower in my centerpieces, bouquet, etc... Can anyone help with some picturess and quotes?
The wedding will have approx 120 guests, so I will need approx. 12 centerpieces, as well as an arbor under which to be married and various other arrangements.
