Sunflower Bouquets

I was wondering how practical having sunflowers as the main component of the bouquet is. I found a bouquet for myself that I absolutely love - it was sunflowers with darker roses and orange dahlias. I was thinking of having my girls carry just sunflowers. Is it practical? Are sunflowers in season the end of October?? Are they sturdy enough?
