Which are the 'off-peak' months?

My FI and I were planning on a Feb 2005 wedding b/c of good deals we have encountered with
some of the catering halls. We've been toying with the idea of July and Aug 2004 b/c we've heard it
also be considered 'off-peak'. Has anyone experienced this? We are on a tight budget and are
trying not to spend more than 45-55 pp. Any ideas appreciated. Thanks.
