A week's worth of dinners.....

A week's worth of dinners.....

So, every Sunday.... Steve and I come up with a menu of that week's dinners. We put all of the ingredients on our shopping list, along with lunches and snacks for the week. In doing so, we save lots of money at the supermarket because we only buy what we need.

I thought that if each of us could share ideas for a week's worth of dinners.... we'd all have lots of ideas of dinners to make! I'll share last week's and this weeks... Please add your own (I'm running out of ideas!!!)

Last week:

Sunday -- Honey-lemon chicken with rice
Monday -- Pasta with roasted veggies
Tuesday -- Grilled chicken, rice, steamed broccoli
Wednesday -- Grilled salmon, rice, sauteed string beans
Thursday -- Hamburgers and oven fries
Friday -- Take out!
Saturday -- Baked ziti and salad

This week:

Sunday -- Grilled steak with garlic butter, with rice & beans
Monday -- Grilled tuna steak with tomato salsa
Tuesday -- Grilled lemony shrimp with rice
Wednesday -- Chicken francese with sauteed asparagus
Thursday -- Grilled Salmon with steamed broccoli
Friday -- leftovers!
Saturday -- Pasta with fresh tomatoes, basil, & mozzarella

Just a note: I grill everything in the grill pan! It's the best

This is our grill pan....

Honestly, I use it for EVERYTHING! We're not allowed to have a BBQ on our terrace in our condo.... but the grill pan is almost as good!

I don't really have recipes for most of these... but I can try to give you an idea of how I make them, and I'll post the ones that I do have recipes for.

I have a grill pan from Calphalon and I've used it to make salmon and burgers a few times before but the smoke that develops is almost impossible to deal with. I have to have all the windows opened and have the stove's air fan on.

Re: A week's worth of dinners.....

Sunday -- Honey-lemon chicken with rice

Ingredients:
-juice and zest of 1 large lemon
-3 tbsp. honey
-2 tsp. finely chopped garlic
-1 1/2 tsp. ground cumin
-1 tsp. dried oregano
-1/2 cup + 2 tbsp. EVOO (extra virgin olive oil)
-4 bone-in chicken breast halves with the skin
-Salt and pepper

I use bone-in chicken breast halves with the skin on. Preheat the oven to 400 degrees, and line a baking sheet with tin foil. Whisk lemon juice and zest, honey, garlic, cumin, oregano, and 1/2 cup EVOO. Put chicken in glass dish, cover with marinade, and leave it in the fridge for at least 30 min.

Heat 2 tbsp. EVOO in grill pan over medium-low heat. Season the chicken with salt and pepper, and put in grill pan, skin side down -- cook for about 5 minutes, or until the skin is browned and crispy. Then transfer it, skin side up, to the baking sheet, and bake until it's cooked through (juices run clear) which should be about 20 minutes.

Monday -- Pasta with roasted veggies

I don't really have a recipe for this. I use Mezzi Rigatoni pasta (but any kind will be fine). Cook the pasta according to the directions. In the meantime, I cut up a peeled eggplant, 1 red pepper, 1 green pepper, and a large onion into large chunks. Place into baking dish, and drizzle with EVOO and finely chopped garlic. Roast them in the oven until they're tender..... Once the pasta is done, add the roasted veggies, some finely chopped basil, oregano, and thyme, and some chopped sun dried tomatoes (from a bottle... i also add a little of the oil that it comes in for extra flavor). Toss and serve. It's delish!

Tuesday -- Grilled chicken, rice, steamed broccoli

I just use boneless, skinless chicken breast.... and I season it with a drizzle of EVOO, some salt, fresh pepper, garlic powder, onion powder, Mrs. Dash, and parsley. Then grill it in the grill pan -- served with rice that I made in our rice cooker, and broccoli that I steam in the microwave (use broccoli crowns, cut into bite-sized pieces, a little bit of water, and a little kosher salt -- microwave for 5-6 minutes)

Wednesday -- Grilled salmon, rice, sauteed string beans

I season the salmon just like the chicken above, and serve it with string beans (cut the ends off) that I sautee in chopped garlic, EVOO, and a dash of soy sauce!

Thursday -- Hamburgers and oven fries

I make these with ground beef (1.5 pounds usually makes 3 burgers for us.... 2 for us for dinner, and 1 for the next day's lunch with salad!). Okay so ground beef, lipton's onion soup mix, a big squirt of ketchup, a little water, a bit of breadcrumbs, and a little A1 steak sauce. Shape them, and grill them in the grill pan until they're cooked to your liking.

I serve them with oven fries. REALLY easy.

Preheat oven to 425.

Cut baking potatoes into wedges, drizzle with extra virgin olive oil, a few minced garlic cloves, and finely chopped fresh rosemary. Sprinkle with salt and pepper. Bake for about 20 minutes at 425, then broil for another 10 or so minutes to make them crispy!

Friday -- Take out!

Don't need a recipe for this one!

Saturday -- Baked ziti and salad

I use ziti (obviously) cooked according to the package. Mix cooked ziti with bottled tomato sauce, ricotta cheese, shredded mozzarella cheese, and 1 egg (beaten). Bake in oven at 375, for about 30 minutes, then broil another 5-10 minutes to make it crispy.

Re: A week's worth of dinners.....

We're heading out to the Farmer's Market and supermarket now.... I'll try to post this week's recipes when I get back!

Share your own too :)
Even if you don't have recipes... I just need some fresh ideas!

Re: A week's worth of dinners.....

Also, making the weekly menu completely eliminates the whole 'what's for dinner' arguments! Steve can just check the menu... and if he's not in the mood for something, we'll just switch the menu of that day with another day.

Re: A week's worth of dinners.....

aww! Hayley, you are such a cute wifey!
This is a great idea. I've been wanting to do something like this... just never sat down and really did it.

anyhow,
here is another menu idea, try shrimp kabobs for dinner one night.
I like to put the shrimp on the skewers first and then i season each one with sea salt, a little pepper, garlic powder, lemon, paprika, and oregano.
We put them on bbq grill but im sure the grill pan will work just as good!

keep sharing your menu of the week!!
I'd like to piggy back off of it!
i will def. try to contribute as well!
