Does anyone know...I have to bake a carrot cake tonight for one of my bosses because he will be on vacation after Friday. I also am baking for my other 2 bosses but they are in next week so I was going to make all 3 tonight and freeze the other 2, is that ok to do? and just take them out on Monday to thaw...or can you not do that with carrot cake?!

I'm not so sure about the icing, but you can definitely freeze the cakes. Wrap them well in plastic wrap, then a layer of foil to make an airtight seal. Don't unwrap them before defrosting, and give them 24 hours in the fridge to defrost.

I really don't know the answer to this but....
my only concern with freezing it would be the frosting unless you would frost it after it thawed out.
