Spinach dip- mmmmm
chili dip- put cream cheese on the bottom...veggie chili or bean mix and Jack cheese on top. bake in the oven until cheese melts...sooo good
veggie platter is always my fav
spring rolls
mozz sticks!!
edit: pasta salad with olives and veggies and a vingerette dressing
cheese and crackers mmmmm

VEGGIE appetizers:anything in puff pastry. especially brie and raspberry jam.
cheese and crackers.
spinach and artichoke dip.
vegetable dip with cut up vegetables.
fruit platter.
vegetarian mexican dip using beans and cheese and tomatoes.
stuffed mushrooms (i fill them with the ends of the mushrooms and breadcrumbs)
olive tapenade soo good.
bruschetta- toast up some bread with tomatoes, mozz, basil and balsamic
cheese and mushroom pies. puff pastry filled with sourcream and a touch of mustard and cooked red peppers, mushrooms and cheddar cheese. delicious.
egg salad on crackers with olives. sound gross but its good.
deviled eggs
nachos vegetarian style.

FRUIT SALSA WITH CINNAMON CHIPS - serves 102 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor
10 (10 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar
Directions
1.In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
2.Preheat oven to 350 degrees F (175 degrees C).
3.Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
4.Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

Double Tomato Bruschetta6 roma (plum) tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil
3 cloves minced garlic
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/4 cup fresh basil, stems removed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 French baguette
2 cups shredded mozzarella cheese
Directions
1.Preheat the oven on broiler setting.
2.In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.
3.Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in a single layer. Broil for 1 to 2 minutes, until slightly brown.
4.Divide the tomato mixture evenly over the baguette slices. Top the slices with mozzarella cheese.
5.Broil for 5 minutes, or until the cheese is melted.

1 (8 ounce) package cream cheese, softened

1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese
Directions
1.In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
2.Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
3.Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

BAKED BRIE IN PUFFED PASTRY1/2 (17.5 ounce) package frozen puff pastry, thawed
1 (8 ounce) wheel Brie cheese
1/4 cup sliced almonds
Directions
1.Preheat oven to 350 degrees F (175 degree C). Lightly grease a 9 inch pie pan.
2.Slice the wheel of Brie in half, horizontally, so that the halves are two, flatter wheels of Brie. Lay the puff pastry in the pie pan. Place half of the Brie (rind-side down) onto the pastry dough. Sprinkle almonds evenly over the top. Place the other half of the Brie (rind-side up) over the almonds. Bundle the pastry dough around the Brie.
3.Bake for 15 to 20 minutes. Let cool for 5 minutes before serving.

1 1/4 cups uncooked tri-color spiral pasta
1/4 cup reduced sodium chicken broth or vegetable broth
3 tablespoons red wine vinegar or cider vinegar
1 tablespoon canola oil
1 garlic clove, minced
1 teaspoon sugar
1 teaspoon dried basil
1/2 teaspoon salt
2 cups broccoli florets
1 cup halved cherry tomatoes
1 large sweet red pepper, julienned
1/4 cup grated Parmesan cheese
Directions
1.Cook pasta according to package directions; rinse under cold water. Drain. In a large bowl, whisk together the broth, vinegar, oil, garlic, sugar, basil and salt. Add pasta, broccoli, tomatoes, pepper and Parmesan and toss to coat.

On the LIF FOod board someone posted a recipe for a greek layer dip that looked awesome. I believe it was all veggie too.
