Carrot Cake Recipe

Does any have a good Carrot Cake recipe???

FIL's b-day is on Wednesday and MIL has asked me to make the cake being that I do all the baking for the holidays and most events.

Thanks

FYI- I've made the one in the weight watchers cookbook and everyone hated it.
