Chicken Pot Pie

DH has been in school M-Sun 8 to 6pm so I wanna make a nice from scratch supper and have it waiting for him when he gets in tonight.

I texted him and asked if he had any cravings or special requests and he said 'just something healthy' (he's had pizza for lunch / dinner for like 3 days in a row at school).

I was going to load up the veggies and only use a pie crust to cover everything (skipping the bottom crust).

Thoughts?

i think it sounds good, but usually on pot pies i like the bottom crust the best. mmmm

Anything and everything is better with crust and I would wrap everything in puff pastry if I could!

DH is a workout buff and is craving something healthy so I figured skipping out on half the crust might lighten it up a bit. I found a Williams Sonoma recipe that does this so I was gonna give it a whirl.

But you're so right....the bottom crust is so delish when everything bakes. Now you've got me thinking I should just do the full crust and he can eat around it if he chooses....right???

do the full crust! at least the inside is healthy.

here is what i do... use bisquik....when you pour the liquid on top of the pot pie, stir it a little. it pretty much turns into biscuit around the pot pie and is YUM

Campbells has a Chicken Pot Pie recipe that is really easy to follow!

I love making Chicken Pot Pie!!

I cook chicken, carrots, potatoes, and peas. I use cream of chicken soup and some chicken broth and mix it with the cooked ingredients. Then I line my baking dish with crust, poor in the ingredients and cover with crust. Make sure to put some slits on top to let the steam escape.

MmMmmMM I want it now!

To all the Chicken Pot Pie ladies out there - I made it last night for the first time from scratch and I love love loved it....DH loved it too! It turned out to be such a great dinner for a chilly winter night!

Thanks for all the tips - I am going to try each of them out as I will definitely be making this dish again!
