BBQ chicken pizza.....SOOOOOOOOO easy!!!

sautee one small onion in some oil...add 1 lb of ground chicken and a can of diced green chiles....

cook until 'brown' more like a grey color LOL....add a cup of BBQ sauce

Meanwhile....toast 4 pocketless pitas in the oven or broiler. Add the chicken mix to the toasted pitas (splitting 4 ways). Top with some shredded cheese (we use cheddar). Cook until melted....

AMAZING!!!!!!!!!!

Re: Darn cooking!! Im out of ideas.

one of our fav meals is a taco salad. it's so simple and so yummy! here's what we do:

put TONS of mixed greens in our bowls, add avocado, cherry tomatoes, ground beef with taco seasoning. then we put on low fat shredded cheese (we buy the block cheese and shred it ourselves, i swear it tastes different that way!), low fat sour cream and taco sauce. it's soooooo good and it literally takes a few minutes.

our previous obsession was pesto pizza: whole wheat pizza crust (boboli), spread store bought pesto on it, add sliced tomatoes all over, feta cheese and fresh basil in the end. YUM!

also, our standby is lemon caper chicken and asparagus. :) HTH!

Re: Darn cooking!! Im out of ideas.

We're big chicken eaters ( I don't eat red meat) and Fh is always experimenting with different sauces. It really changes things up. Hehas a whole collection of different sauces- teryaki sauce, bbq sauce, worstchester, hot sauce, wine, honey mustard, et and he'll just add different combos of each to chicken and it always taste different. He sometimes adds veggies(peppers, onions, tomatoes, etc) and rice or potatoes..

They're always surprisingly good, although hard to recreate!

Re: Darn cooking!! Im out of ideas.

You can always try to switch things up!

We recently bought salmon burgers, sirloin burgers and popcorn chicken at Costco .. so I make that 1x a week ...

then I'll make:

pasta w/ broccoli
pasta w/ pesto broccoli
pasta w/ shrimp scampi
mac 'n cheese (we make our own - just add cheese and butter to the pasta when its hot!)
grilled chicken
grilled chicken (marinated w/ bbq sauce)
grilled chicken (marinated with dijon mustard)
breaded chicken cutlets
breaded chicken cutlets w/ bruschetta (tom, onions, EVOO)
broccoli rabe w/ chicken/turkey sausage w/ feta cheese (from Costco)
Lipton sides - theres a lot of pasta and rice sides that are really good - and sometimes I will just add grilled chicken to it.
Chicken Quesadillas - I just make grilled chicken and add onions, cheese, red peppers - then toast pita bread - add some salsa and sour cream .. and its quick and delish!

Some sides:
frozen corn
frozen mixed veggies
whole-wheat couscous (i usually add asparagus, EVOO, and feta cheese .. soo good!)
asparagus
whole wheat couscous w/ sun dried tom and cheese
garlic bread
sweet potato fries (from Trader Joe's)
baked fries (from Costco - I season them myself - sometimes add cheese on top)
salad (add diff veggies, cheese, nuts, craisins, etc to switch it up)

Look up recipes online to get ideas .. and also you can buy some really quick and easy things to make like frozen pizza (Kashi makes good, healthy ones) or like spinach and cheese pie, shrimp tempura, fried rice (all from Trader Joe's)

As u can see, we do ALL of our shopping at Costco and Trader Joe's

Hope this helps!

Re: Darn cooking!! Im out of ideas.

This is one of my faves, and definitely different!

Mexican Stuffed Peppers

Ingredients:
-1 lb chopped chicken
-taco seasoning powder
-8 oz jar of taco sauce
-black beans (about 3/4 cup)
-1/2 cup long grain rice
-1 cup water
-taco cheese (separated)
-6 peppers (any color)

Directions:
-cut the tops off of the peppers and scoop out all the seeds, rinse the insides of the pepper to make sure the seeds are cleared out. Dry peppers bottom side up on a paper towel

-Preheat oven to 350

-mix the rice & the water, bring to a boil, then lower heat, cover & simmer for 20 minutes

-cook chicken according to directions on the taco mix packet, drain water when chicken is done cooking

-pour enough water in the bottom of a 9x13 baking dish to coat the bottom of the dish

-mix the rice, chopped chicken, beans, taco sauce & 2 small handfuls of the taco cheese (depending on how cheesy you want your peppers) in a mixing bowl.

-generously scoop chicken mixture into the 6 peppers. Place peppers in baking dish. Cover baking dish with tin foil, bake for 1 hour.

Optional: 5 minutes before done baking, uncover and sprinkle extra taco cheese on top of the peppers
