Re: Darn cooking!! Im out of ideas.
I just made this again lest night-so easy. i have made it with lump crab meat too when i want to be fancy. Literally a 20 minute emal if you make angel hair pasta, even with the prep.
BAKED SHRIMP WITH FETA CHEESE
MAKES 4 SERVINGS
INGREDIENTS:
? 1 teaspoon olive oil
? ¾ teaspoon dried oregano
? ½ teaspoon salt
? ¼ teaspoon crushed red pepper
? 1 pound medium shrimp, peeled and deveined (I used 1.5-2 lbs because Pete likes extra. I buy them cheaper frozen in the freezer section at Costco and they’re great.)
? 3 garlic cloves, minced (I mash my garlic or if in a hurry, use this GREAT stuff called GARLIC GARLIC. I’ll show you the site. Its like garlic powder but much stronger and tastes like real garlic as opposed to that weird powder aftertaste. Pete loves it)
? Cooking spray
? ½ cup dry white wine (I used ¾ cup)
? 3 cups diced plum tomato (I just chopped up about 6 tomatoes into small pieces and it was enough but you can add or subtract)
? ¾ cup (3 ounces) finely crumbled feta cheese (feta cheese is great for lactose intolerant people and people with Acid reflux. Not sure why but its on the list of things I can eat and doesn’t upset my stomach.)
? 1 small can of sliced black olives
? 4 cups hot cooked angel hair pasta (I eyeball it-I used about half of the box when I made it for 3 people and there was food left over)
? ¼ cup minced fresh parsley (this is really optional. I didn’t use more than a few sprinkles.)
DIRECTIONS:
1. Preheat oven to 350°F.
2. Heat oil in a large nonstick skillet over medium-high heat. Add the oregano and the next 4 ingredients (oregano through garlic); sauté for 2-3 minutes. Spoon the shrimp mixture into an 11 x 7-inch baking dish coated with cooking spray.
3. Add wine to skillet; cook over low heat until reduced to ¼ cup (about 3 minutes. I also throw in some butter to make it a wine butter sauce-just eyeball it.).
4. Stir in tomato and black olives, and pour over the shrimp mixture. Sprinkle with feta cheese, and bake at 350°F for 10 minutes. Serve mixture over pasta, and sprinkle with parsley if you want to.
