Dh and I got a few pounds of chicken breast and marinated it in Light Italian dressing. We made them all on the griddler.

Tonight we are having it over some salad, tomorrow we will haev it over couscous and if there is any left over we take it for lunch one day!

Going to a steakhouse with friends for dinner - it's an awesome place and we have a gift card and I'm super excited!

Not sure yet - depends on if we're going to visit my grandmother in the hospital or not.

DH was saying last night he was gonna go food shopping today and spend the day cooking sauce, sausage and peppers and meatloaf and freeze everything so he could take it to work for his dinners, but we'll see if he actually wakes up in time to do any of that

Re: Dinner plans for tonight????????

traditionally you used lamb or beef but you can do turkey.

1lb of ground meat (your choice)
3 stalks of celery
1/2 large white onion or 1 cup of leeks diced small
1 cup of diced carrots or sliced cooked
1 cup of peas you can use frozen slightly thawed or fully cooked depending on how you smooshy you like them.
1 and 1/2 cans of gravy (match up your meat) use fat free you can't tell the difference.
Mashed potatoes (for healthy version no milk/no butter just chicken broth fat free)
Cheese (fat free if you wish to be healthy)
salt n pepper, paparika (sp) and some thyme

I weight out the potatoes I did about 1lb boiled and smashed them with chicken broth or do your usual mashed potato recipe. Boil the carrots so they are mostly cooked. Take the peas out.

Saute onions or leeks and celery till cooked take out and transfer to your baking dish, saute meat and drain fat away and add to the baking dish and mix together adding some black pepper and a dash of salt and thyme. Add gravy, peas and carrots. Top with mashed potatoes and add some of salt and pepper, paperika and thyme. Bake at 350 for about 20 minutes then add cheese on top and bake or change to broil like i do till golden brown.
