I have chicken cutlets defrosting, but not sure what to make yet.

Me too! I think I'm doing chicken with red peppers, some onions and some sofrito! Served over brown rice. Soo yummy!

traditionally you used lamb or beef but you can do turkey.

1lb of ground meat (your choice)
3 stalks of celery
1/2 large white onion or 1 cup of leeks diced small
1 cup of diced carrots or sliced cooked
1 cup of peas you can use frozen slightly thawed or fully cooked depending on how you smooshy you like them.
1 and 1/2 cans of gravy (match up your meat) use fat free you can't tell the difference.
Mashed potatoes (for healthy version no milk/no butter just chicken broth fat free)
Cheese (fat free if you wish to be healthy)
salt n pepper, paparika (sp) and some thyme

I weight out the potatoes I did about 1lb boiled and smashed them with chicken broth or do your usual mashed potato recipe. Boil the carrots so they are mostly cooked. Take the peas out.

Saute onions or leeks and celery till cooked take out and transfer to your baking dish, saute meat and drain fat away and add to the baking dish and mix together adding some black pepper and a dash of salt and thyme. Add gravy, peas and carrots. Top with mashed potatoes and add some of salt and pepper, paperika and thyme. Bake at 350 for about 20 minutes then add cheese on top and bake or change to broil like i do till golden brown.

am I a weirdo for never knowing what shepards pie was and thinking it was nasty but reading your recipe and notebooking it cuz I totally want to make it on a cold snowy day? (with turkey meat of course!)
