with your husband? If so, how often? We try to once a month...sometimes it's hard to be creative after going out for years, and now that we're married we see each other every day anyway. Any suggestions of something different and fun to do?

We do. Way to much to be honest! We love to get dressed up and go to our favorite places

It's never too much or too often . It's not so much a 'date' but we make sure either on Sat or Sun we do dating stuff (go to movie, rental, eat out, take in, cook for one another, cook together, purchase flowers,or fun in a couple of other ways)

tonight was our one month married and i made him a crown roast with the trimmings and we ate our wedding cake and drank beers - does that count?

Yes every Friday we go for dinner and movie/broadway show.
For something different, I suggest something we did for valentine day. DH booked a hotel in NYC, watch a Broadway show and had a really nice dinner to Per Se restaurant. ts a bit pricey but once in a while its kind of fun.
