when it comes to meatballs or anything you really have to use with groundmeat, i personally prefer using beef, veal, pork ground meat together. It always gives things a better flavor.

I make meatballs but for different things, use it for meatball soup and keftedes which is more of a greek meatball. Its almost the same but we use rice and a few other things. Never tried it with sauce and spaghetti to see how it tastes

but here is a recipe i found

Meatballs:

1/2 pound ground pork

1/2 pound ground veal

1/2 pound ground beef

2 large eggs, lightly beaten

1/3 cup grated Parmesan

4 cloves garlic, finely chopped and sauteed

1/4 cup dry bread crumbs

1/4 cup finely chopped Italian parsley leaves

1 cup pure olive oil

Salt and freshly ground pepper

Combine all the ingredients in a medium bowl, except olive oil. Season with salt and pepper. Roll the mixture into 1 1/2-inch balls. Heat the oil in large saute pan over medium-high heat. When oil is hot, fry meatballs, in batches as needed, until golden brown, but not cooked through completely. Remove with a slotted spoon to a plate lined with paper towels

My recipe is almost the same as Espos except minus the olive oil...i bake mine for 45 minutes turning them once in the oven on 350. I also add a cube of mozzerella every now and then which is amazing. I also love to throw a third of a cup of parmigiano reggiano cheese in the mix. Then i let them soak in the sauce for about 2 hours. DH loves them with the mozzerella. Just a warning about ground turkey meat....i make just turkey meatballs all the time but when u mix it in with the beef and the pork it tastes really funny. JMHO

Definitely follow Denise's advice about the pork/veal/meat combination...you can't taste any of the meats by themselves and it gives the meatballs excellent flavor. It's usually sold as like meatloaf mixture.

I have pretty much the same recipe as Denise.

Denise's recipe is right on....Just wanted to add, you don't have to buy the meat separately...if you go to the meat counter, they have what's called a 'Meatloaf Mix' and that's what you use for the meatballs. It's all three meats already packaged together.

Also, it says not to fry them completely but that is if you intend to put them in the sauce. If you're eating them plain, I would cook them through.

Anyone else hate how dirty the oven gets after you bake them or is it just me?

Re: Does anyone have a good recipe for meatballs?

my grandmother is known for her meatballs...so is my mom - & now so am i this is the recipe i use; a lot of it is eyeballing so i'm sorry for the vague-ness!

- couple lbs. chopmeat (i use ground beef)
- 1 egg
- 2Cups italian('seasoned') breadcrumbs..i only used 4c Brand!
- Garlic Powder; lots(cover meat)
- Parmesean Cheese; lots (again - cover meat!)
-Milk (a little at a time untill softened)
- Ketchup (about 3 squirts)
- Parsely (lots)

First: Mix meat with egg, garlic powder, cheese, parsley & kethcup - mix well.

Add: Breadcrumbs; mix well...add milk a little at a time untill just softened(about 1/2 cup or so).

Roll meatballs...season with salt & pepper, drop in sauce.

Let simmer in sauce for about 1 1/2 - 2 hours or untill cooked through.

Sauce Recipe if u'd like :

3 large cans tomato sauce
2 large cans crushed tomatos
- LOTS of basil(cover top of sauce, then mix in)
- 6 cloves fresh garlic - minced
- 1 large onion - chopped
-little bit of olive oil
-little bit of sugar
- about 1/2 cup red or white wine(optional)

1) Brown onion in a little olive oil...once tender add garlic and brown a little more... if adding any sausage or pork add now & brown.

2) Add sauce, spices & 1 can of water

3) Bring to a boil and then simmer...add sugar to taste (a little at a time untill flavor is to ur liking)

4) add in meatballs & simmer for about 1 1/2 to 2 hours.

Enjoy!

Re: Does anyone have a good recipe for meatballs?

I think my Czechoslovakian grandma makes the BEST meatballs ever. Better than my Italian MIL.

She never uses bread crumbs - only day old rolls from the deli. And of course special seasoning.

thats how my family does it too, instead of bread crumbs we use small pieces of bread that you soak in either water or milk, some ppl do it differently. Plus like i said before, we also use rice in it. But these meatballs arent meant for pasta and they arent shaped perfectly round either. BUt mmmmm i am in the mood for them now with some mashed potatoes

and i agree, i like this type of meatballs better
