. I think I saw you while I was walking down the stairs and you were walking out...which was around that time.Today was awesome, barely anyone there and I got to do 4.5 miles

the gym was SO empty today. i loved it! i wish it could be like that at night time too

OH! Yes! Okay, I kind of didn't follow a recipe LOL but there's tons of good ones. Here's what I did in a nutshell:
> 1 large onion chopped up
> Garlic (probably like a good 4-5 cloves, I used a teaspoon of already chopped up garlic)
> 1 red pepper
> 1 yellow pepper (you can use other colors too)
> Sautee the above together until they get a little soft, cooked through
> I added in Goya Sazon (a whole packet), salt, pepper, parsley, red crushed pepper, and paprika
> Once all this cooks for a couple of minutes, I then added 2 cups of water (probably have been better if I used chicken broth but I didn't have any) and 1 cup of rice
> Then I let it cook through and mixed it here and there so it didn't get stuck. This was for like a good 15-20 minutes I think.
> On the side, I had a bag of frozen shrimp, calamari and scallops. I sauteed them to get them pink and cooked through on the side (10 minutes into the rice being done). Once this was cooked through good, I mixed it in w/ the rice.
> Then I cooked the rice and all the mixings for another few minuts until the rice was done (the liquid goes away but it looks moist).
> Added in a cup of tomato sauce, mixed it all up for another few minutes
> Let it rest for a few minutes and VOILA. Added more parsley on top.
SO YUMMY.

Did you use white rice? and any can of tomoto sauce right? omg your pic looked so moist and delish. i can't wait to try this. sounds easy enough, i hope! thks ms. betty crocker

Yup just regular Uncle Benjamin or whatever rice, nothing fancy lol. The tomato sauce was just a tomato and basil regular tomato sauce.

I'm going to make it w/ chicken next time, I think that will be even yummier!
