flounder recipe - great for lent
I made this tonight and I figured I'd share because I loved it. It's a lot like the italian garlic chicken I posted so you might feel slight cases of deja vu
4 flounder filets
1 pack italian dressing seasoning mix
1/4 c romano cheese
1/4 c parmesan cheese
1/4 c italian seasoned panko breadcrumbs
1/2 tsp garlic powder
I used a little bit of adobo in the seasoning but you don't have to
lemon wedge
Preheat oven to 350. Mix everything but the flounder filets and lemon together, run the filets under cold water, shake off excess water and cover in the panko mixture. Lay them on a cookie sheet covered in tin foil (you should spray it with pam first, the cheese will cause the fish to stick). Bake for 10 minutes and then broil on low for 5 minutes. Before serving squirt with someone lemon. I don't know if this overcooking the fish but DH and I are nuts and scared of eating raw anything so we overcook everything. You can use your judgement but that's how long i baked it for and it came out good .
