FOR ALL THOSE THAT ATE THEIR 1 YR CAKE.....

How was it?? we forgot to take ours with us on our trip, but I thawed it out yesterday and it was absolutely delicious. A side note here, it was not the cake from the hall it was the traditional Jamaican black cake/wedding cake and it preserved very well. Moist, sweet and could get you so drunk just by smelling it. The icing is as sweet and fresh as I remember, I took a slice in to work for my BM and my moh to have. I was scared at first but after my first bite I could not get enough.

Shamma - we had our cake too and it was just as good as we remembered it on our wedding day. The cake was moist and the icing was creamy! We loved it!

I still haven't had mine...its in my moms freezer...so I'll have to wait until october...at least to try!! or maybe I'll get a small cake made from our baker...just for the symbolism!!

We had the rum cake too and it was delicious. The hall cake we ate the entire thing after the wedding

ours was good too. The fondant outside had a freezer burn taste but the inside was moist and delicious. One piece was enough for me but my in-laws took the rest home to finish it off!

Some people eat their's at their one month, so for those that cannot wait, can probably eat it at 1, 3 or 6 mos. Enjoy it whenever you want, hey eat a piece a month all the way there.

We are planning to have ours this week or early next week. Like Misty said, I cant wait to free up the room in my freezer. Hope it tastes good.

I must agree it does take up a lot of freezer space I was so happy to take it out and try it as well as get that part of my freezer back

I wish I had saved my cake ...i thought it would taste aweful so I didnt bother ... but I guess i would have been wrong.

We had ours on our 1 yr anniversary. My mom kept it in her freezer for us -- thank god because it did take up so much room! The cake was good, the icing did taste like it had a little freezer burn though. We saved a very small piece to keep in the freezer as a keepsake.

Ours is still in the freezer. Its not looking that appetizing with the freezerburn all over it.

Sue, did you wrap it well. I might look like that on the outside, ours did, but was just so awesome once it was opened. Fret not, it will be good.

I'll be able to answer this in about 7 weeks! Ours is wrapped really well so I hope it takes good. I told DH about this tradition yesterday and it wasn't at all excited about eating a year-old cake

Ours held up pretty well too. We didn't eat the whole thing though. It was slightly freezer burn but it made it all the way down from NY - my mom brought it down at Christmas the year we got married -- she had it in her cooler driving from NY to NC!

I've also thought about getting a small cake done by a local bakery for our next anniversary. In just a few weeks it will be 2 years.
