Good Chicken Recipe

i make this sometimes

i take ham and some shredded cheese , and roll up the chicken. coat chicken in mayo then cover in Italian bread crumbs. Cook on 350 for about 45 minutes

also I use toothpicks to help hold then closed

SALSA CHICKEN

3-4 corn or flour tortillas
2 large boneless chicken breasts (cut into cubes) (or add more chicken if you'd like)
cooking spray
olive oil
1 large onion chopped
1 small can of green chillis
3/4 cup low fat grated cheese (I like the mexi-blend)
1 cup salsa
sour cream optional

Cut tortilla's into thin strips (1 inch wide by 2 inches long). Coat both sides with cooking spray and put on a large cookie sheet and bake for 10-13 minutes or until golden and crispy.

In a large pan cook the chicken in a bit of olive oil until opague. Add 3/4 cup of the salsa, coat chicken welland continue cooking and stirring often.

In a seperate pan, saute the onions in a little olive oil for 2-3 minutes. Add green chillis and continue sauteeing for another minute. At last, add the cheese and cook until cheese is melted (mixing constantly). Here you can also add the sour cream but I usually skip this step.

Arrange the tortilla strips on a plate. Layer the onion mixture on top of the tortillas and finish with the chicken as the top layer. Add a few more dabs of salsa for extra flavoring.

This serves 2 people and is very yummy and pretty good for you!
