Healthy recipes for Valentine's Day?

Hi Gals,

I'm planning to cook for DH for Valentine's Day. Problem is, he has high cholesterol and is supposed to steer clear of eggs, high-fat dairy, and red meat. He's been really good since New Year's and I don't want to derail him...

Any ideas for a yummy & healthy meal and dessert?

TIA!

He likes seafood, but we are in a condo and not allowed to have a grill. I do have a grill pan for the stove, though...

I'd recommend any kind of fish (salmon, halibut, etc) or some kind of pasta dish with shrimp or other seafood in it. For a quick and yummy pasta dish I toss shrimp in a little bit of olive oil with some garlic and onion, then add some asparagus and toss the whole thing in angel hair pasta - you can serve with a spinach salad or something like that and skip the big tempting hunk of garlic bread that usually accompanies pasta meals

For dessert you could get some kind of sorbet - you can buy chocolate sorbet so it's not so girly

I would buy some scallops (the BIG ones) and grill them on your grill pan with a little olive oil and maybe serve that over a nice salad with baby field greens dressed in a good quality olive oil and balsamic .

for dessert you can make cocunut milk tapioca and fresh berries. It is made with coconut milk, no dairy so it doesn't have all the bad fat.

Let me know if yu want the recipe for coconut milk tapioca!

Not really, I jsut said to grill the scallops and make a healthy salad. Anyways, I don't recomend the bacon dressing for someone that is watching their cholesterol.

Here is the recipe. I usually cut it in half because it makes so much!! Enjoy!

Dairy Free Tapioca Pudding:
Ingredients:
2/3 cup Tapioca (Small Pearl)
1 1/4 cups Water
4 1/2 cups Coconut Milk
1/2 tsp Sea Salt
4 Eggs, separated
1 cup Sugar
1 tbsp Vanilla

Soak tapioca in water for 30 minutes in a large (2 quart) saucepan. Add coconut milk, salt and lightly beaten egg yolks to tapioca and stir over medium heat until boiling.

Simmer uncovered over very low heat for 10-15 minutes. Stir often. Beat egg whites with sugar until soft peaks form. Fold about 1 cup of hot tapioca into the egg whites, then gently fold mixture back into saucepan. Stir over low heat for about 3 minutes. Cool 15 minutes then add vanilla. You can also add some nutmeg to taste.

Makes 7 cups.
