How far in advance

can I make meatballs if I am going to freeze them? Do you think I can make them today or tomorrow for Christmas?

I would think you are fine to make them tonight/tomorrow for sat if your game plan is to freeze them! Figure if you make them tomorrow they will only be frozen for 2 full days...not bad!

ive had them after being frozen for a lot longer than 2 days...

I feel like if you make them tomorrow you wouldn't even have to freeze them... you could just have them in the fridge.

Unless you're talking about leaving them raw and not cooking them. But if you're cooking them now, they should be fine for Friday or Saturday... especially if you wait until tomorrow.

Just my thoughts. I don't cook with beef though, only ground turkey, so I don't know if that's a difference.

I cook with ground turkey too, so it sounds like it should be OK.
