Re: lets talk Christmas/ Holiday Cookies
I'm making pizzelle - they're big flat Italian cookies, kinda like a wafer.
I got a pizzelle maker from my registry from my Mom's friend, she makes them every year and I've always looked forward to them. She gave me her recipe, so now I can make my own!
I also have a cookie press, I may make spritz cookies, color them with food coloring in red and green, or maybe do them in white and color them with sprinkles. If anyone has spritz cookie recipes, please post them. I'm sure I can find some online, I'd rather use one from someone who's used it though.

Re: lets talk Christmas/ Holiday Cookies
I always make Christmas cookies and give as gifts I start after Thanksgiving. I usually make:
*Chocolate chip (good filler!) *Pride of Iowa Oatmeal Cookies *Sugar Cookies -- cookie cutter & decorate *Butter Cookies (DH's family always makes these with the cookie press, so we will do that this year with their recipe which MIL gave me last Christmas ) *Nut cups (the mini-pecan pie ones) *Almond cookies *Ice Box cookies (my mom's family's recipe--like a brown sugar cookie with walnuts--they are a slice and bake)
Think that's it right now....sometimes I have done PB Cookies, Gingerbread cookies, Chocolate Gingerbread, Candy Cane cookies.....many varieties
ETA: Last year DH and I made chocolate and white chocolate covered pretzels also

It's so friggin good. Just watch how much dough you use because the cookies are supposed to be somewhat bite size. The first time I made this the dough expanded so much you can hardly find the andes mint! And don't skip drizzling the cookies with the extra andes mints. It does wonders for the appearance of the cookie

Re: lets talk Christmas/ Holiday Cookies
Every year I make pasta di mandorle. They are a very soft moist almond cookie. Nonna's cookies which are the lemon cookies with lemon icing - they look more like biscuits. And this year I am trying this sugar cookie with nutella inside!
