Re: MAC & CHEESE recipes??

I have an awesome recipe for Italian Mac n Cheese, I made it this weekend for superbowl huge hit

Yield
8 servings (serving size: 1 1/4 cups)

Ingredients
1 pound uncooked penne
1/4 cup all-purpose flour (about 1 ounce)
3 cups fat-free milk
2 cups (8 ounces) shredded fontina cheese
1/4 cup (2 ounces) mascarpone cheese
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Cooking spray
3 (1-ounce) slices white bread
1 tablespoon butter
1 small garlic clove, minced
1 1/2 tablespoons chopped fresh parsley
Preparation

Cook pasta according to package directions, omitting salt and fat. Drain; keep warm.

Preheat oven to 350°.

Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and milk in a large saucepan over medium heat, stirring with a whisk. Cook 10 minutes or until thick, stirring constantly with a whisk. Remove from heat; add cheeses, stirring with a whisk until smooth. Stir in salt and black pepper. Add cooked pasta, stirring to coat. Spoon pasta mixture into a 13 x 9-inch baking dish coated with cooking spray.

Tear bread into several pieces. Place bread in a food processor; process until fine crumbs measure 1 1/2 cups.

Melt butter in a small skillet over medium heat. Add garlic; cook 30 seconds. Remove from heat. Stir in breadcrumbs until well combined. Sprinkle breadcrumb mixture evenly over pasta mixture. Bake at 350° for 25 minutes or until bubbly. Sprinkle with parsley.

Re: MAC & CHEESE recipes??

2 cups of elbow macaroni
4 tbsp. of flour
1 tsp. of salt
1 lb. of Velveeta cheese
4 tbsp. of margarine
3 cups of milk
¼ tsp. of pepper
1 cup of buttered bread crumbs (about 2 tbsp of butter mixed with bread crumbs – just enough butter to coat the crumbs)

1. Cook and drain elbows and place them in a buttered casserole.

2. Melt margarine in a medium sized pot. Add flour, salt, and pepper and then blend together. Add milk slowly until the sauce thickens.

3. Cut cheese into cubes and add to sauce, stirring constantly until cheese melts.

4. Pour sauce over elbows and top with previously buttered bread crumbs.

5. Bake at 350 degrees for 30 minutes.

Re: MAC & CHEESE recipes??

I love this recipe. It's Alton Brown. I also put in some shredded smoked Gouda

Ingredients
1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs
Directions
Preheat oven to 350 degrees F.

In a large pot of boiling, salted water cook the pasta to al dente.

While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.

Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.

Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

Remember to save leftovers for fried Macaroni and Cheese.

Re: MAC & CHEESE recipes??

Here i had posted a great macaroni and cheese recipe a few months ago so ill paste the link here so i dont have to type it all up again lol. Its 5 cheese macaroni and cheese, called over the rainbow. It is Patti Labelle's recipe and there is also a video of her making the mac and cheese in the thread. It is AMAZING!!!! but warning that it is heavy so watch what you serve it with. You dont want to eat anything else heavy with it.
