Molten Lava Cakes.....

i saw a bunch of u ladies posting about these the other day - choc. souflee is my FAVVVOOORRRIIITE. do any of u ladies have recipes or are u getting them pre-made & then baking them??? if any of u have recipes please let me know - and let me know if they're a pain to make lol. tia!

Do you want me to FM you? They arent that hard and some of the brands like Duncan Hines have them too-just follow the directions! I made one like that and one from scratch-one from scratch was a bigger PITA and they tased about the same.

I make the first recipe, but the second one is quicker. Recipes courtesy of Ghirardelli Chocolate.

Individual Chocolate Lava Cakes
Yield: 6 Servings
1 60% Cacao Bittersweet Chocolate Baking Bar
1/2 60% Cacao Bittersweet Chocolate Baking Bar
2 eggs
1/4 cup(s) heavy cream
8 tablespoon(s) (1 stick) unsalted butter
2 egg yolks
1/3 cup(s) sugar
1/2 teaspoon(s) vanilla extract
1/4 cup(s) cake flour

Directions
To make centers, melt chocolate and cream in double boiler. Whisk gently to blend. Refrigerate about 2 hours or until firm. Form into 6 balls; refrigerate until needed.

To make cake, heat oven to 400°F. Spray six 4-ounce ramekins or custard cups with cooking spray. Melt chocolate and butter in double boiler; whisk gently to blend. With an electric mixer, whisk eggs, yolks, sugar, and vanilla on high speed about 5 minutes or until thick and light. Fold melted chocolate mixture and flour into egg mixture just until combined. Spoon cake batter into ramekins. Place a chocolate ball in the middle of each ramekin.

Bake about 15 minutes or until cake is firm to the touch. Let it sit out of the oven for about 5 minutes. Run a small, sharp knife around inside of each ramekin, place a plate on top, invert and remove ramekin. Garnish with raspberries and a dollop of whipped cream.


Individual Soft Center Cakes
Yield: 4 servings
4 ounce(s) 60% Cacao Bittersweet Chocolate Baking Bar
8 tablespoon(s) unsalted butter (1 stick)
2 whole eggs
2 egg yolks
1/3 cup(s) sugar
1/2 teaspoon(s) vanilla extract
1 tablespoon(s) cake flour

Directions
Melt butter and chocolate in double boiler. Whip eggs, yolks, sugar, and vanilla with a mixer for about 10 minutes on high speed. Fold melted chocolate and butter into the egg mixture. Fold in flour just until combined. Butter and sugar four 6-ounce ramekins, then spoon mixture into ramekins. Bake at 450°F for about 9–10 minutes. The center will be quite soft, but the top and sides will be set. Let sit out of the oven for about 5 minutes, then unmold onto a plate. Serve with a few raspberries and a dollop of whipped cream.

I have two recipes: One I used that came out good and one from my SIL-hers turned out undercooked but tasted great. Also at the very bottom is the name of the Duncan Hines ones I used-MUCH easier-just follow directions, and it tastes YUMMY!

(Mine)Paul Dean's Recipe:

Paula Deen's Molten Lava Cake Recipe #154126
Paula says this cake is great alone, but it can be topped with vanilla ice cream or a raspberry sauce. The recipe can be made ahead and refrigerated for 2 to 3 days.

(I didnt make the sauce. I made a creme sort of glaze I used on Angel Food cake and then added vanilla ice cream to cut the richness of the chocolate.) It was good-just more work than the box mix which was JUST as good!

6 servings
Cooking time: 14 minutes

Ingredients:

6 (1 ounce) bittersweet chocolate squares
2 (1 ounce) semi-sweet chocolate baking squares
10 tablespoons butter
1/2 cup all-purpose flour
1 1/2 cups confectioners' sugar
3 large eggs
3 egg yolks
1 teaspoon vanilla extract
2 tablespoons Grand Marnier

Preheat oven to 425°F Grease 6 (6-ounce) custard cups.

Melt chocolates and butter in the microwave or in a double boiler. Add flour and sugar to chocolate mixture. Stir in eggs until smooth. Stir in vanilla and Grand Marnier. Divide batter evenly among custard cups.

Bake for 14 minutes. Edges should be firm but the center will be runny. Run a knife around the edge to loosen and invert onto dessert plate.
Top with vanilla ice cream or raspberry sauce. (Topping optional).

SIL's recipe:
Chocolate Molten Lava Cake

***FROZEN CHOCOLATE CENTERS***
6 ounces semisweet chocolate -- finely chopped
3/4 cup heavy cream
2 tablespoons light corn syrup
1 tablespoon Grand Marnier
1 teaspoon vanilla extract
1/4 teaspoon finely grated orange zest

***CHOCOLATE CAKE***

Softened butter -- for buttering the ramekins
9 ounces semisweet chocolate -- coarsely chopped
1/4 cup water
2 teaspoons instant coffee granules
3/4 cup plus 3 tablespoons sifted all-purpose flour
1/8 teaspoon salt
8 tablespoons unsalted butter -- (1 stick) slightly softened
1/2 cup plus 1 tablespoon granulated sugar -- used in two separate measurements
2 teaspoons vanilla extract
3 large eggs plus 1 large egg white -- separated (at room temperature)

Put the chocolate in a 1-quart measuring cup with a pouring spout. In a small saucepan, set over medium heat, heat the cream and corn syrup, stirring constantly with a wooden spoon, until the mixture comes to a boil. Pour the hot cream over the chocolate. Let the mixture stand for 30 seconds, to melt the chocolate. Gently whisk until smooth. Stir in the Grand Marnier, vanilla and orange zest.

Cover an ice cube tray with a piece of plastic wrap. With your fingers, press down on the plastic wrap to line six individual ice cube cavities with plastic. Pour the warm chocolate mixture into the six lined ice cube cavities, filling each one to the brim. Reserve the remaining chocolate mixture in a heat proof bowl to be used later as a sauce. Cover and refrigerate. Cover the filled ice cube tray with plastic wrap. Freeze the ice cube tray with the chocolate mixture for 3 to 4 hours, until frozen solid. Keep the frozen chocolate in the freezer until ready to assemble the dessert.

Chocolate cake: Make the chocolate cake:

Position a rack in the center of the oven and preheat to 425 degrees F. Generously butter the bottom and sides of six 6-ounce ramekins. Put the ramekins on a baking sheet. Melt the chocolate with the water and coffee. Gently whisk until smooth. Let the chocolate mixture cool for 5 to 10 minutes, until tepid.

In a medium bowl, using a wire whisk, stir together the flour and salt until thoroughly blended. Sift onto a piece of waxed paper.

In a large bowl, using a hand-held electric mixer set at medium speed, beat the butter for 30 seconds until creamy. While continuing to beat, gradually add 1/2 cup of the sugar. Beat in the vanilla. One at a time, add the egg yolks, beating well after each addition. Add the melted chocolate mixture and beat until smooth. Scrape down the side of the bowl with a rubber spatula.

In a large grease-free bowl using a hand-held electric mixer and clean beaters, beat the egg whites at low speed until frothy. Gradually increase the speed to high and beat the whites until soft peaks start to form. One teaspoon at a time, add the remaining 1 tablespoon of sugar and continue beating the whites until stiff, shiny peaks form.

Fold one-third of the whites along with one-third of the flour mixture into the batter. One-third at a time, gently fold in the remaining egg whites and the flour.

Spoon half of the batter, filling each ramekin a little more than half full.

Unwrap the frozen chocolate cubes. Nestle a frozen chocolate cube in the center of each batter-filled ramekin. Spoon the remaining batter over the tops of the frozen chocolate cubes, covering them completely.

Bake for 15 to 20 minutes, until the batter has risen about 1/2-inch above the ramekin rims and the tops are slightly cracked.

Williams Sonoma has an AWESOME mix for these but its not cheap.... BUT the box makes like 12 of them.

what a coincidence!...my friend and cook angela mckeller was on paula dean's show the other day (like 2 nights ago) with her lava cakes and the recipes on food network website now. not sure this is exactly what youre looking for but here ya go choc hazlenut lava cakes

and youll see these are super easy!!!!

im so excited for her, i realllly think shes about to make her BIG break. her website is kick back and kook

jenn let me know if you end up trying it (taryn too), bc angela is known for making recipes pretty quick and easy so i really dont think it should be hard! id love to hear how it is bc i love hazelnut and chocolate so if someone makes them before me, let me know if its worth trying.

the video of her on paula dean is here so you can see just how easy and yummy it looks!

I am going to try them on Friday i think for desert. They look super easy and I really like hazlenut so I should try it.
