We do have leftovers that will go to waste! Dh and I are lactose intolerant. It's too tempting having them in the fridge

thank you! I don't have a recipe, it was a duncan hines mix. The only place i was able to find it was at target. I did make my own icing, here's the recipe I used:

Ingredients

1/2 cup butter, softened
8 ounces cream cheese
4 cups confectioners' sugar
2 teaspoons vanilla extract

DIRECTIONS

Beat softened butter and cream cheese until well blended.

Add powdered sugar and vanilla. Beat until creamy.

eta: I should add that the amount of sugar this recipe called for was way too much. My first batch lost it's cream cheese flavor because of it. For the second batch I used half of the recommended sugar amount and it was much better.

Yum! I didn't even know that Duncan Heines made a mix for that! I love the Sprinkles red velvet mix but it's expensive. I made a Paula Deen recipe for a friend that was amazing.

oh yea? Would you mind posting or FMing me the recipe? Duncan Hines only has the red velvet mix around the holidays so I have to go stock up! The only place I've been able to find it is at target. What is the sprinkles red velvet mix?

Grandmother Paula's Red Velvet Cake
Recipe courtesy Paula Deen
Cook Time
25 min
Level
Intermediate
Yield
16 to 20 servings
Cake:
2 cups sugar
1/2 pound (2 sticks) butter, at room temperature
2 eggs
2 tablespoons cocoa powder
2 ounces red food coloring
2 1/2 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 tablespoon vinegar
Icing:
1 (8-ounce) package cream cheese
1 stick butter, softened
1 cup melted marshmallows
1 (1-pound) box confectioners' sugar
1 cup shredded coconut
1 cup chopped pecans
Directions
Preheat oven to 350 degrees F.

In a mixing bowl, cream the sugar and butter, beat until light and fluffy. Add the eggs one at a time and mix well after each addition. Mix cocoa and food coloring together and then add to sugar mixture; mix well. Sift together flour and salt. Add flour mixture to the creamed mixture alternately with buttermilk. Blend in vanilla. In a small bowl, combine baking soda and vinegar and add to mixture. Pour batter into 3 (8-inch) round greased and floured pans. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Remove from heat and cool completely before frosting.

Icing:
Blend cream cheese and butter together in a mixing bowl. Add marshmallows and sugar and blend. Fold in coconut and nuts. Spread between layers and on top and sides of cooled cake.

I actually don't make that icing-I just make a regular cream cheese icing.

Sprinkles is a cupcake bakery in LA that is very popular and they started making mixes. So far I've only seen them at Williams-Sonoma but they are a nice treat once in a while.
