some appetizers...

spinach artichoke dip, seven layer dip(mexican) serve with tortilla chips..

Bruschetta and the mini toasted breads(forgot the name that makes them)

mini spinach pie triangles

can all be bought premade at BJs in the freezer/frig section!!!

to add to the lasagna and chicken.. like the sausage & pepper idea or meatballs..

oh and rolls!

Sorry no good suggestions - at all of our celebrations it's latino food galore - lots of arroz con gandules, platanos maduros, pollo al horno, etc. I swear, we have like the same food for EVERY event!

haha---ain't that the truth !!!

honestly no one can say no to a nice tray of arroz con gandules!!!!!

Exactly... I think my family would protest if they went to a party and there was no arroz con gandules!!!!

I would definitely do a salad and a fruit salad and then a veggie tray.

Swedish Meatballs, Macaroni and Cheese, Rice, Coleslaw, Eggplant Paragima (sp). Pumpernickel Bread with Spinach Dip. That is all we can think of for now.

Re: Need help with food ideas for a baby shower?

I make this like once a week for me & DH. Probably why we are such lard a$$es. This is the most unhealthy thing you'll ever eat. But sometimes I put peas in it so we get our veggies

Caroline's Baked Mac & Cheese

1 box of medium shells (or whatever pasta you like)
1 cup light cream
¼ tps (or a few dashes) nutmeg
½ stick unsalted butter
½ cup of shredded swiss
½ cup of shredded cheddar (I use sharp cheddar)
½ cup (8 oz) of Velveeta (cut into cubes)
¼ cup of parmesan

Bread crumbs (optional)
another ½ cup of cheddar (for the top)

For the record:
- I prefer to buy chunks of cheese & use a cheese grater. I think pre-shredded cheese is dried out. The better quality the cheese, the better the taste (duh).
- I also like unsalted butter because this can get a little salty with all the cheeses. If you like salt, use regular butter.

Preheat oven to 400

Butter or grease a casserole dish

Boil water & make pasta. Take it out early, like after 7 minutes. Don’t overcook the macaroni!! Drain pasta

Heat cream & butter over medium-low heat in a heavy sauce pot. Do not let boil or burn. Add a few dashes of nutmeg. Slowly start to add in the cheeses. Add a little at a time & keep stirring so it doesn’t burn. Add the Velveeta last because it melts the quickest. You should have a thick cheese sauce. If you want it a little thinner, add more light cream.

Pour drained pasta into the casserole dish. Pour the melted cheese mixture over the pasta & stir it up real good!

Top with the remaining ½ cup of cheddar & bread crumbs if desired. Bake in 400 over until it’s brown on top & bubbling (which won’t be long at all)

Re: Need help with food ideas for a baby shower?

My other recipe has fewer ingredients & isn't as decadent. REALLY easy and very good

Italian Mac & Cheese

1 pound pasta
1/2 stick butter
1/2 cup light cream (or half & half)
1 small tub of Marscapone cheese
1/2 cup of grated Parmesan

Boil the pasta per the box directions
Melt cream, butter, marscapone & Parmesan in saucepan. Add cooked, drained pasta & serve

You can also add cooked lobster meat to this for a crazy good lobster mac & cheese. When I do that, I up the cream & cut down on the pasta
