Need Help with Menu for Lunch with ILs Tomorrow

Okay so ILs are coming tomorrow to see our new apartment so DH and I thought it would be fun to be good hosts and make some yummy foods.
Unfortuntely, I have been so busy this week we haven't planned anything!

What are some easy, yummy foods we can make for lunch?

Paninis? my sister has a panini maker and they come out so good... obviously it would be hard without one...

Rachel Ray made an amazing 'BLD' meal last week on 30 minute meals - BLD = breakfast, lunch, dinner, meaning it could be served for any of those meals! It was a frittata with potatoes and onions, crostini with tomato and mozzarella, . . . and I forget the dessert. let me try to find it on foodnetwork. . .

ETA: here's the link, you can see the episode is 'Italian BLD' and you can probably get to the other recipes from here, it looked so yummy!

buy cold cuts, bread, pot/macaroni salads, pickles, olives and maybe a cheese cake or cookies and call it a day.

I usually hate cole slaw but about three months ago I made Bobby Flays recipe and now everywhere we go everybody requests that I bring it. Its so easy and cheap and everyone always loves it.

you can do paninin's w/out a panini maker... if you have a forman grill, grill pan or even just a big fying pan, like making grilled cheese!

What about grilled chicken over ceasar salad?

thanks ladies!!

i suggested just buying cold cuts and stuff but this is the first apartment we actually have more room to 'host' ppl so DH wants us to actually cook and prepare food.

thanks for the suggestions...panini's sound yummy!
