you may be able to make the cupcakes tomorrow and freeze them, then ice them on xmas eve/xmas morning....but i wouldn't ice them until then, they might get like soggy

I would avoid freezing them...they never feel the same to me. Sorry Lauren, but I would do it on Christmas Eve. Cookies keep longer than cupcakes. No one wants a hard old cupcake!

I would make the ones for christmas day tomorrow and then make the ones for the day after later if you can fit it in.

I have a ton to bake too and I am doing it tonight. I dont think I will be able to get to it tomorrow.. oh well!

Dont freeze them. You can make them tonight if you want and then ice them the day of. I just made my peanutbutter cake last night and it'll stay good. Just make sure you keep them in something to keep them fresh.

I would make them today and tomorrow and put them in tuppoware in the fridge. You could even leave them out.... but just make sure they are covered so they aren't stale.
You can ice them on Xmas eve.

PS - I also wouldn't freeze them... it's not necessary.

You could ice them ahead too as long as you keep them in something airtight. Especially if your using certain homemade icings, if you need a good recipe let me know.

I think this should work - it's just so air doesn't get it them. Are you using butter cream? I would just ice them the day of, though if you are refrigerating them icing usually isn't a problem for a few days. . . I mean they would be better day of but honestly people will probably just LOVE cupcakes no matter what and if they are a day or two less fresh - who cares?

The other option is - (if you have this kind of anal in you ;) if you just prep all your ingredients and make the frosting ahead of time - the actual time to make them will be like 10 minutes plus baking - just measure all your ingredients etc. .

Re: Need to make Cupcakes...

my mom puts them in tupperwares without the frosting. They stay moist for four days. This is what she did when she did it for the business and had to deliver large quantities. Hope that helps.

Also add apple sauce instead of oil and they stay fresh :)

I would make them all tomorrow, keep them in the fridge, covered and then frost them the latest you can. I bake all the time and as long as you cover it and keep it in the fridge it will stay fresh mmm....I love cupcakes!! happy baking

Tupperware should be fine. I usually bake and ice cupcakes/cakes a few days ahead. But I cake decorate so they are never simple 10 min frosting jobs.
