I think for many reasons we all could use a stupid, positive distraction right now.

What's everyone cooking for dinner tonight?

I'm grilling up some thin sliced chicken breast on my George Forman to put over whole grain pasta and broccoli rabe with garlic and oil. I also have some EXCELLENT baked tomoatos leftover (cut in half, drizzled with EVOO, garlic, and breadcrumbs). Maybe I'll toss a salad to go with it, but think that it's too much food as it is.

NOTHING!!!!!!!!!!!!! im opening a pouch of TUNA and eating that.

i am DONE cooking this week! last night i had ENOUGH!

Aside from working ft/cleaning/food shoppping.. i try to cook dinnner every night. and last night was it!

grilled parmesean citrus shrimp and 3 types of seasoned chicken. i spent over an hour preparing. FH comes home.. we sit down to eat, phone rings.. friend was outside for some computer part. FIFTEEEN MINUTES OUT THERE!!!!!!!!!!!!!!!!!!!!!!!

NO FKN CONSIDERATION! i ate ALONE, AGAIN! and cleaned up. he comes in all chipper.. i told him im DONE and i walked out the dinning room.

u think when i woke up this morning i woudl feel better? NOPE. The dinning room table had crumbs and sauce on it! MOOOOOOOOTHERR FKKKKKR didnt even have the decency to CLEAN UP after himself!!!!!!!!!!!

so yea. he will be eating garbanzo beans for a while

end rant

I hear ya!! I can't stand when I make a meal for him and have to make mine second because he doesn't eat veggies and I love my veggies It only took one time when he wanted to start eating while I was just starting to make mine...just had to make a little snotty comment and it seemed to fix itself. **One of the easiest arguments we've had, at least for me to win!!**

Honestly, sometimes they just don't think...throw a comment and your point will be made...try it and see if it works

Stuffed peppers from my ww cookbook. Ali, how do you cook your brocoli rabe? I made it yesterday and it came out too bitter, even for broccoli rabe.

I just use garlic and oil on my broccoli rabe, but I let it go a loooooooooooooong time. It's very dark green, almost browned, and soft by the time I get through with it, and I find that makes it less bitter.

What temp do you roast your tomatoes at?

Sounds delicious!

I do them at 375 for about 20 minutes, and they get really sweet and soft...tastes like clams oreganato. I also put some salt, pepper, garlic powder, onion powder, and oregano, forgot that the first time, plus the breadcrumbs, fresh garlic, and oil.

This sounds AMAZING! What kind of tomatoes do you use? Roma?

I used Beefsteak tomatoes this time because I wanted a large surface area when I halved them for all the spices and crumbs and oil to absorb in to.
