Love it, Kim!!

Honey Teriyaki Chicken

SO easy and quick! It's my fall-back dinner when I have nothing else planned and need something fast!!! Deeeelish!

1lb thin chicken cutlets
2 tbsp sesame oil
1/2 tspn garlic salt
1/4 cup of honey
1/4 cup of teriyaki sauce
sesame seeds (optional)

Put the chicken cutlets in a Ziploc bag with the sesame oil and garlic salt. Toss to coat. Grill on BBQ or griddle. As chicken is cooking, mix the honey and teriyaki sauce together. As each cutlet comes off the grill, baste it with the mixture (and sprinkle sesame seeds if you're using them). That's all! SO easy and yummy!!!

GLAZED CORNISH HEN WITH ORANGE AND
WILD RICE STUFFING

4 cornish hens
1 (6 oz.) pkg. long grain and wild rice mix
1 tsp. orange rind, grated
1 1/3 c. fresh orange juice
1 c. converted rice, uncooked
butter
1/3 c. honey
1 tbsp. brown sugar
1/3 tsp. salt

Thaw hens completely, if frozen.
FOR STUFFING: Cook rice mix according to package directions, adding rind and 1 cup orange juice. In separate pan, cook converted rice according to package directions. Toss rices together (recipe makes 4 1/2 cups stuffing).

RINSE: Hens, pat dry; loosely stuff each body cavity with 1/2 cup stuffing; close with skewers or sew. Tie legs together with string; fold wing tips under backs. Rub with butter. Place breast side up; on rack in roasting pan. Roast at 325 degrees for 1 1/2 hours or until done.

MEANWHILE: Combine honey, remaining 1/3 cup orange juice, 2 tablespoons butter, brown sugar and salt; boil hard for 1 minute. During last 25 minutes of roasting, baste every 10 minutes with glaze. Heat remaining stuffing to pass separately. Garnish hens with parsley and orange wedges.

NOTE: This stuffing also very good when baking duckling. When baking duckling, bake covered for a portion of baking time, duckling will be more tender and well done at the bone.

Amazing Empanadas, The filling was so F-ing good.

Beef Wonton Empanadas
adapted from Epicurious.com
1/2 medium onion finely chopped
1 Tablespoon olive oil
1 garlic clove, finely chopped
1/2 teaspoon cumin
1/2 teaspoon oregano
3/4 pound ground beef chuck
2 Tablespoons raisins
1 1/2 Tablespoon chopped pimiento-stuffed olives
1 (14-ounce) can whole tomato in juice, drained, reserving 2 tablespoons of juice, and chopped
1 package frozen empanada pastry disks, thawed, or 1 package wonton wrappers
4 cups vegetable oil
1 egg, for an egg wash
Cook onion in olive oil in a heavy medium skillet over medium heat, stirring frequently, until softened. Add garlic, cumin, and oregano and cook, stirring, 1 minute. Stir in beef and cook, breaking up lumps with a fork, until no longer pink, about 4 minutes.
Add raisins, olives, 1/2 teaspoon salt, 1/4 teaspoon pepper, and tomatoes with reserved juice, then cook, stirring occasionally, until liquid is reduced but mixture is still moist, about 5 minutes. Spread on a plate to cool.
Preheat oven to 200°F with rack in middle.
In a small bowl, beat an egg for a egg wash.
Unwrap wonton wrappers and 6-12 square pastry pieces out at a time. Spoon 1 teaspoon of cooled meet filling into the center of each wonton wrapper. Using a pastry brush, brush two joining sides of the wonton wrapper. Gently fold the dry ends of the wrapper onto the moistened ends. Press with a fork to seal.
If using thawed empanada dough, lay a large sheet of plastic wrap on a dampened work surface (to help keep plastic in place), then roll out an empanada disk on plastic wrap to measure about 6 inches. Place 3 tablespoons meat mixture on disk and top with 2 slices of egg. Moisten edges of disk with water and fold over to form a semicircle, then crimp with a fork. Make more empanadas in same manner.
Heat 3/4 inch vegetable oil in a deep 12-inch skillet over medium heat until it registers 360°F on thermometer. Fry empanadas, 2 or 3 at a time, turning once, until crisp and golden, 2 minutes for wontons and 4 to 6 minutes for empanada pastry.
Transfer to a shallow baking pan and keep warm in oven. Return oil to 360°F between batches.
Cooks’ note: Empanadas can be brushed with oil and baked on an oiled baking sheet in a 425°F oven until golden, about 10 minutes. (They will not be as crisp as fried empanadas.)

Shrimp Ceviche Recipe

If you find the ceviche a little too acidic, drain out some of the juices after the marinating, add a little more avocado (or some olive oil) and/or a little more salt.

Ingredients
1 pound medium-small shrimp, peeled and deveined
2 Tbsp salt
3/4 cup lime juice (juice from 4-6 limes)
3/4 cup lemon juice (juice from 2-3 lemons)
1 cup finely chopped red onion
1 serrano chile, ribs and seeds removed, minced
1 cup chopped cilantro
1 cucumber, peeled diced into 1/2-inch pieces
1 avocado, peeled, seed removed, cut into 1/2-inch chunks
Method

1 In a large pot, bring to a boil 4 quarts of water, salted with 2 Tbsp salt. Add the shrimp and cook for 1 minute to 2 minutes max, depending on size of shrimp. (Over-cooking the shrimp will turn it rubbery.) Remove shrimp with a slotted spoon and place into a bowl of ice water to stop the cooking.

2 Drain the shrimp. Cut each piece of shrimp in half, or into inch-long pieces. Place shrimp in a glass or ceramic bowl. Mix in the lime and lemon juice. Cover and refrigerate for a half hour.

3 Mix in the chopped red onion and serrano chile. Refrigerate an additional half hour.

4 Right before serving, add the cilantro, cucumber, and avocado.

Serves 4-6.

Re: OFFICIAL NW' Receipe THREAD!!!!

This is a family recipe and sooo good so I thought I should share - this is on another thread so sorry for double post.

CHICKEN FRANCHAISE WITH ARTICHOKE HEARTS

2 packages of thin boneless chicken cutlets (or pound thin if you cant find cutlets)
flour
few dashes of parmesan
eggs
salt, pepper
olive oil
1 package of fresh mushrooms
1-2 cans of canned artichoke hearts (not marinated)
1 jar of capers (in olive section of supermarket)
1 jar of sundried tomatoes
1 sliced lemon (slice into rounds)
1 can of chicken broth
1/2 cup of white wine
1 stick of butter
juice of a lemon

Heat olive oil and 1/2 stick butter in large pan or electric skillet. Whisk egg, salt, pepper, dash of parmesan and a few tbs of lemon juice. Flour chicken, dip in egg mixture and fry on both sides until golden. Drain on paper towels and then put in pyrex and place in oven on warm.

Now wipe plan clean and put fresh oil and 1/2 stick butter (this is what I do) or leave oil that was in there. Add in remaining ingredients: and feel free to eliminate any of these veggies if you dont like them: mushrooms, artichoke hearts, capers, sundried tomatoes, lemon rounds, remaining fresh lemon juice, chicken broth, white wine, additional salt and pepper and simmer for 15-20 min until the mushrooms are soft. Pour this mixture over chicken in pyrex and serve. It would probably be good over rice but we usually have it plain or with a side of brocolli rabe. ENJOY!

This will serve 4 people...or you will have enought for alot of leftovers and it tastes great the next day!
