Pretty good and easy recipe I tried tonight!

And DH liked it! Got it from Fitness magazine.

Chicken breasts with mustard caper sauce

Ingredients
6 Boneless, skinless chicken breast halves (about 2 pounds total)
1/4 tsp Salt
1/8 tsp Black pepper
1 can (14.5 ounces) chicken broth
1/4 cup Drained capers
1/2 tsp Dried rosemary
1/4 tsp Dried thyme
2 tbsp Dijon mustard
1 tbsp Honey
41/2 cups Cooked hot couscous

Preparation
Coat a large skillet with cooking spray. Place over medium-high heat. Season chicken on both sides with salt and pepper. Add to skillet: cook each side about 5-6 minutes, or until cooked through. Remove and keep warm.

Add broth, capers, rosemary and thyme to skillet; cook over medium-high heat, scraping up any browned bits from bottom of skillet, for 5 minutes. Remove skillet from heat; stir in the mustard and honey, Pour sauce over chicken and serve with couscous.

I made a salad to go with it and made rice instead of couscous - didn't think Brett would go for the couscous. He's weird.

Gotta do my title proud I suppose! Thanks Ev!!!

DH still complains about the 'cleaning process' though. He still thinks it's easier and cheaper to order in or just make pasta.

See, during the week DH just makes his own turkey wrap sandwiches- every single night- for dinner. Wackadoo. It's a habit he's been in for a long time. I'm the same way though- I have PB&J every day for lunch! So weekends are the time I get to try to cook for the guy!

Sounds Really Good except DH & I really do not like capers. I wonder if I can leave them out. I am going to try it.

Thanks for sharing Mrs. 'NOTW'

We moved into our under construction house and cannot use the oven or the top cooker. So we have been stuck on take out or sandwiches. I read all these recipes and feel so lazy. Oh well I have the rest of my life to cook I'll enjoy it while I can.(I secretly hope it never gets hooked up )

when we were on vacation a couple years ago, DH ate this chicken / fried potato / pepper dish with a horseradish mustard cream sauce which he LOVED. Ever since then, he's wanted another mustard chicken dish. I think I may make this for him!
