Quick Weeknight Meals

Quick Weeknight Meals

Now that I finally have a working stove/oven, unfortunately this means I have to cook every night LOL.

What are some quick and easy meals you girls make for weeknights? I don't get home until 5:40, later if I need to go to the grocery store first, and probably the next few months even later than that because I'll be busy at work and staying till close to 5:30. By that time I'm in no mood to cook anything too involved.

TIA!!!

I like easy things you can put together quickly like stir fries and grilled chicken and those steam in the bag veggies. I use frozen vegetables for the stir fry recipes and they always come out good. We've been avoiding an extra 'side' and sticking with a meat and a vegetable. Also, if you have a slow cooker those are awesome and make a huge amount of food that you can eat for days!

Chicken & Broccoli w/ Brown Rice
Taco Night w/ Turkey Meat
Pasta w/ Veggies, Garlic & Oil
Breakfast for Dinner (My favorite)
Sandwiches Hot & Melted w/ a panini press
Rotisserie Chicken (Store bought) just make sides.
Slow Cooker Anything. I was weird about leaving it on while we were at work so I would throw everything in the night before, and let it cook while we slept. Then in the morning I would throw it in the fridge b4 work & heat it up for dinner.

If you need any recipes let me know. Also I so cheat w/ brown rice & veggies when we are in a rush & buy those ones that come in the microwave steam bags. So quick.

We do Taco night, Steak, Chicken Cutlets, Pasta, etc on weeknights.. and usually something more involved or something with the slow cooker on weekends. Go to Allrecipes.com and play around on there. I find a ton of great recipes on there and if you like them you can save them to your 'recipe box'.

Campbells has a lot of good easy dishes on their website. I like the chicken stuffing skillet or the mushroom chicken.

I have a few easy recipes too, like chicken roll ups (I am trying to find the actual recipe so I can put it in the cookbook. Or I will melt mozzarella cheese in the center of chicken and bread crumb the chicken. Or I will use a more pungent cheese and then roll the chicken in dried onion. Another meal I do is a baked chicken parm. I bread crumb the thin chicken strips, put tomato sauce on it, layer it with mozzarella cheese and bake it. Another one is I buy the mozzarella balls in Costco and the jar of bruschetta mix and I make chicken bruschetta.

We eat a lot of cheese, lol.

Thanks for all the suggestions so far!

Unfortunately, DH is very fussy when it comes to food...I can't really make anything that's too prepared, or canned, because he's nuts with canned/frozen/boxed foods, anything that has preservatives, etc. We spend a fortune in natural/organic crap, but he just won't eat it otherwise...so in addition to it having to be quick and easy, it also has to be from scratch, which is a big issue to get around and have it fit both criteria!

I just take grilled chicken and bake it in some olive oil, salt, pepper, and some garlic powder.
Set the oven for 350 and cook for around 30 minutes.

I feel like baking it keeps the chicken juicy.

Then take a bag of frozen veggies and cook stove top. That takes like 5 or 10 minutes.

Cook some instant brown rice

Its fast, super healthy, and easy.

SOmething for future reference: At Trader Joe's there's a ton of frozen entrees you literally just throw in the oven or stove and Voila! Awesome dinner.

I swear by Trader Joe's

Then you should put HIM in charge of cooking! I say if you don't like what the cook is making, make something yourself! I can understand the canned stuff because I don't use canned vegetables but frozen veggies are just as good as fresh and I'm sure they have organic ones.

I don't use canned freaks me out too w/ your DH on that one. I buy frozen organic veggies like broccoli, spinach.

Re: Quick Weeknight Meals

Turkey burgers - I usually make mashed potatoes from the box on the side or corn or a salad

Tacos - no side needed but if u want u can have rice

Grilled Chicken with either rice or a few veggies...FYI fresh Broccoli lasts long in the fridge...u can def but veggies on the weekend and use then throught out the week

When DH is in the mood for Pasta I usually just make the regular old Tomato Sauce with Pasta or Ravioli...those will fill him up too...

He also likes Tortellini soup which takes like 10 minutes to make.

Chicken Cutlets and a salad is quick....
Lemon Chicken ( I have the recipe if you want)

I'm not into frozen veggies too much but peas, corn, broccoli really arent bad and they're good sides.

Ohhh and Lentil soup...I usually make a big batch, we eat some and I freeze the rest, it's really easy to re-heat esp. if you take it out the morning you plan on eating it....

and lastly...steaks, cut up and cooked like a stir fry with peppers and onions over white rice is really quick and yummy.

Hope that helped...FM me if you need some recipes.

Re: Quick Weeknight Meals

If you have the time, maybe you can prepare a few extra meals on the weekends. I love to cook but I hate doing it when I get home late. I've started doing this on the weekends when I have the time to enjoy it and it's been great. This weekend I made a huge pot of mashed potatoes, then I made shephards pie to put in the feezer and a meatloaf to go with the rest. Sometimes I'll throw on meal in the slowcooker and make a second dinner in a big batch. We have lots of quick meals in the freezer and don't eat the same leftovers in a row. I usually get my recipes from allrecipes, foodnetwork, and realsimple.com. The last site has lots of easy recipes with no packaged ingredients. Some of my favs to freeze are burritto pie, meatballs and sauce, chicken fried rice, shepherds pie, beef stew. And we always have chicken chile, both of our favorites!

I second that, DH can tell me if he really likes something or doesn't like it at all, but otherwise if he wants to be picky he can cook himself.

Re: Quick Weeknight Meals

I can relate. I don't usually get home til about 7:30 or 8 and then have to cook.

The George Foreman grill is a God send! You can marinate chicken or beef in Teriyaki sauce while you're at work. Then put the meat on skewers with pineapple, onion, bell pepper and tomato. Grill it up and serve with rice and veggies.

I also found some quick and easy chicken recipes on the Perdue web site. The Fit & Easy thin cutlets cook up very quickly. There was one recipe where you dredge the chicken in a mixture of flour and garlic salt. Brown each side in a pan with a little oil (about a minute per side). Remove the chicken. Then add 1/4 of lemon juice and 1/2 cup white wine to the pan. Let it boil for about 30 seconds. Then put the chicken back in, cover it, and simmer for about 4 or 5 minutes.

You can pretty much mix up any cut up veggies with chicken, sausage, and/or bacon, and cook it all in a big frying pan with olive oil and minced garlic and add to pasta with any kind of cheese. That's a big favorite of ours.

Re: Quick Weeknight Meals

One meal I make is a Turkey Meatloaf. I wake up a little early and defrost and prepare the meatloaf. Then when I get home, I throw it in the oven for an hour.

I take:
1 lb. ground turkey
some ketchup
garlic powder
1 egg
salt
pepper
bread crumbs
grated cheese

and put it together. bake at 350 for about 55 minutes.

I'm sorry I don't have measurments, I just usually put stuff in!

Once again the balsamic chicken I posted before works! it takes 2o minutes to cook!

We also make 'pizzas'

Take whole wheat, white, low carb, whatever kind of wrap you like. Take cheese of your choice( I use Fat free for me and red. fat for DH) and a bit of sauce(homemade or canned) and bake in the oven! So easy and yummy!

Re: Quick Weeknight Meals

Throwing a chicken in the oven is great. I have so many chicken recipes that are good and easy. Plus, crock pot cooking is key for busy people. Got a ton of recipes for that. I also lazy it up a bit and make hamburgers and hotdogs sometimes. And even mixing a marinade and broiling a steak. Those steam in a bag veggies- LOVE those too!
