Quick Weeknight Meals

Original post by coldasice217

Now that I finally have a working stove/oven, unfortunately this means I have to cook every night LOL.

What are some quick and easy meals you girls make for weeknights? I don't get home until 5:40, later if I need to go to the grocery store first, and probably the next few months even later than that because I'll be busy at work and staying till close to 5:30. By that time I'm in no mood to cook anything too involved.

TIA!!!

Re: Quick Weeknight Meals

some of my 'go to meals' are-

Meals in a crock pot 2 -3 times a month. I love the way they smell and warm the home. I have done Ribs, Stew, Soup, Pot Roast, and Chilli in my CP.

Tacos or Fajitas! Quick and easy and can be done many many different ways!

Chicken cutlets! Some times I bake them with a salad dressing over them for flavor (really easy and tasty!) Or breaded and fried. Other times if we are NOT dieting I will make a breast with feta crumbled on top and a slice of bacon over it! so yummy

Meatloaf! Pork, Chicken, beef- you can make it a lot of ways

Also something else is keep a bag of frozen shrimp in your freezer. You can take them out for dinner (just the amount you need) and toss them in pasta, make a shrimp cocktail, sautee them and have a salad.

Once again the balsamic chicken I posted before works! it takes 2o minutes to cook!

We also make 'pizzas'

Take whole wheat, white, low carb, whatever kind of wrap you like. Take cheese of your choice( I use Fat free for me and red. fat for DH) and a bit of sauce(homemade or canned) and bake in the oven! So easy and yummy!

Those pizzas sound yummy and easy!

SO delicious!

Also have you thought about making things in advance? We cook our dinners for the week (other than wrap pizzas) on Sundays and just microwave..we both get home late and want to eat so it is so much easier!

Thanks everyone for all the suggestions!

We are going to try to make casserole-type dishes on the weekends so we can use it for at least one other weeknight meal and a lunch for DH...but another stipulation is that it must be oven-reheated, not microwaved...because the microwave is bad for you.

Yep, I've got my hands full with this one.

Plan ahead and try to food shop on the weekends. DH and I both get home late and have crazy schedules. The rule in our house is usually whoever gets home first cooks. We also try to prepare a few meals over the weekend. In the winter we make hearty soups and stews. Lasagna is another dish that reheats well and is easy to prepare ahead of time. I always have a few quick meals for backup if we both get home late. Trader Joes has some really good prepared foods that are healthy and organic. I always keep chicken cutlets in the freezer and frozen veggies. There is nothing unhealthy about using frozen veggies- Sometimes it is even better b/c they are flash frozen and it helps retain nutrients. My DH imports fruit and if you ever saw the produce market you would probably never eat fresh fruit or veggies again...I try not to think about it and always wash EVERYTHING even the prewashed salad.

My DH use to have an issue with the microwave and after nearly three years he has finally let it go. My rule is if I am cooking I am going to do it my way

I'm not sure if you can do this with regular ziplocs, but I use a foodsaver for the meals that I cook ahead. Then defrost overnight when you're ready and you can reheat them by submerging it in simmering water until it's heated through. This would probably be easier than putting things in the overnwhere they might get dried out.

Honestly, if you're looking for quick and easy, sign up on the Campbells Kitchen website. They send you recipes in your email. Most of the recipes take less that 45 minutes from start to finish and they are good.

This week I started something new you might like if you dont want to cook everyday. I bought 15 tupperwears dinner size. On Friday I cook a big meal and fill 5, Saturday I fill five more and on Sunday I fill the last 5. Then FH and I have lunch and dinner for the week and I just keep a big salad that I mix on sunday night in the fridge to go on the side of everything. It saves me HOURS!

Sorry just saw that your fh hates the microwave... maybe if you got corningware you could prep 3 or 4 casseroles in the fridge and then throw them in the oven for 30 minutes.

otherwise i agree that your best bet is baked chicken veggies and rice. all whole food approved you could make it more fun and put all of it in a wrap!
