Red Velvet Truffles! 
I don't have my usual red velvet cake recipe at work though.
Here's Bakerella's instructions but it's using boxed cake mix, which is fine. I just wasn't sure if you wanted to make them from scratch.

My sister & i made these for Christmas & my only advice is for this step:4. Chill for several hours. (You can speed this up by putting in the freezer.)
Freeze over night instead of just chilling. If they are too soft they will just fall apart when you dip them into the hot chocolate.

i personally like the oreo ones better...so, if you're interested in them:
8oz cream cheese
1 package oreos
chocolate
crumble the oreos (not too fine)
mix in cream cheese until there is no white
roll into balls
freeze for 1-3 hours OR leave in fridge overnight (so they are hard and dont break/stick when dipped in chocolate)
once hard
melt chocolate
dip balls into chocolate
refrigerate.
enjoy

I made these for Christmas ..I used Duncan Hines Red Velvet cake mix and Betty Crocker cream cheese frosting (whipped) ..
I made the cake according to the box directions. After it was done and cooled I added the frosting. I used about 90% of the can. I mixed it with my hands. Yes its messy - who cares.
When it was all mixed up i formed little balls. I put them on cookie sheets and let them get firm in the fridge for a few hours. When they were cold and firm I melted white chocolate (I used the ghiradelli bars and melted in the microwave) .. using two spoons I dipped the balls in the melted chocolate then placed back in the fridge. They are amazing and I have Jill to thank

In addition to this advice I would suggest only using 3/4 can of frosting.
What I did was:
Baked the cake, let it cool, crumbled it and added the frosting.
Then I put that in the freezer for a few hours.
Then I took it out of the freezer and rolled the balls. Once all of the balls were made I put them in the freezer overnight.
I also found that microwaving the chocolate is much better than using a double boiler.

I just used a recipe from online. I made my own cream cheese frosting though....soo much better than the can !! Here is a pic of mine from christmas
