I just made this the other night.

Yellow squash and or zucchini. Cut into half moons. Saute in olive oil until translucent-season with salt and pepper and herbs. I added cherry tomatoes. It came out good. It's not really heavy which is nice with fish.

I ♥ roasted asparagus. It's one of my favorite vegetables.

when I make salmon, I like to have a side of asparagas. i cook it on the grill pan with a little olive oil and salt and pepper.

or roasted brussel sprouts. Mix them with olive oil, salt and pepper. Then bake them at 450 for about 25-35 minutes. They will get brown and crispy and so so good!

Brazilian White Rice

Ingredients:

2 cups long-grain white rice
2 tablespoons minced onion
2 cloves garlic, minced
2 tablespoons vegetable oil or olive oil
1 teaspoon salt
2 cups hot water
1 can of Chicken Broth

Directions:

Place the rice in a colander and rinse thoroughly with cold water; set aside.

Heat the oil in a saucepan over medium heat.

Cook the onion in the oil for one minute.

Stir in the garlic and cook until the garlic is golden brown.

Add the rice and salt and cook and stir until the rice begins to brown.

Pour hot water and chicken broth over rice mixture and stir.

Reduce heat to low, cover the saucepan, and allow to simmer until the water has been absorbed, 20 to 25 minutes.
