side dishes..
so dh and i are trying to eat a bit healthier..nothing to crazy...so i have a lot of good recipes for grilled chicken etc but what about side dishes besides stamed veggies or a side salad
anyone have any?

lobster baked potatough we had this on our hm in disney and we can't stop talking about it! it was delicious!!!
on the healthy side...
brown rice
couscous
you could do grilled veggies instead of steamed
corn on the cob
other salads like pasta, potato, three bean, etc. (healthy recipes do exist for these somewhere haha)
i dunno if they're healthy but i love:
egg noodles
rice pilaf
rosemary garlic potato wedges (they're in the freezer section at key food)

DH always eat brown rice when we are trying to be healthy! add a little hot sauce and its pretty good!!!and steamfresh veggies are our friend! 5 mins in the microwave and wahhhllaaaa!
also black beans are pretty good too! i never liked beans but then i went in a diet and ate them all the time! pretty good!

We eat only fresh veggies and DH loves everything cooked with olive oil and garlic...broc, broc rabe, spinach, zucchini, string beans, escarole.We also grill alot of veggies like peppers, onions, asparagus, corn on the cob.
Sweet potatoes are also very good.

baked potatoes are actually not that bad for you as long as you lay off most of the toppings.

String beans and almonds...mmmm.I also make a rice and orzo mixture...sort of like a ghetto rice-a-roni (much healthier though, without all the added crap)...I usually dump in a can of mixed veggies and then serve my meat over the rice/veggie mixture.

Probably not too healthy but tonight I'm making BLT smashed potatoes - bacon, leek and tomatoes in red smashed potatoes.

here are some things that I make. . . . .for asparagus with a little olive oil and sprinkle with lemon pepper seasoning - then grill it or cook it in a frying pan. it is SOOOOOOO Good my DH LOVES it!!!
for broccoli use a little olive oil and lot's of garlic powder little bit of sea salt and black pepper and BBQ. yummm, yum, yum!!!!!
for broccoli rabe or a mix of veggies - I just sautee (sp) with garlic & oll
zucchini - I slice add a little olive oil, fresh parsley and feta cheese, a squeeze of lemon (Then I slice the lemon and put in the mix) and bake for 10 minutes
cucumber salad - cut up the cucumbers add flavored rice wine vinegar (best if you let sit over night)
brussels sprouts - yes I like them
mix them in a bowl with a little olive oil and sea salt (more then I would use) and black pepper - put them on a cookie sheet and roast them at 400 - till the outside leafs turn brown.

i usually have brown rice on the side.sweet potatos are also good- they're alot better than regular potatos.
knishes are good too. ( i think they're only like 6 WW pts each..so you can cut it in half)

oh!!!Cherry tomato's on the BBQ - mix with olive oil and season with sea salt and black pepper - put on skewers and bbq - yum.

DH and I love this WW recipe:Au Gratin Potatoes
1 spray(s) cooking spray
1 Tbsp butter
1 medium onion(s), thinly sliced
2 Tbsp all-purpose flour
2 cup(s) fat-free skim milk
2 pound(s) Yukon Gold potato(es), thinly sliced
1 cup(s) low-fat shredded cheddar cheese
1 tsp table salt
1/4 tsp black pepper
Instructions
* Preheat oven to 375°F. Coat a 2-quart covered baking dish with cooking spray.
* Melt butter in a large pot over medium heat. Add onion and cook, stirring occasionally, until onion begins to brown, about 5 minutes. Stir in flour; add milk slowly, stirring. Add potatoes and stir to mix. Bring to a boil. Stir in 3/4 cup of cheese, salt and pepper.
* Pour mixture into prepared baking dish and level out surface. Bake for 1 hour, uncovered. Cover and bake until potatoes are fork-tender, about 20 minutes more.
* Change oven temperature to broil. Sprinkle remaining cheese over potatoes. Broil 6 inches from the heating element until the cheese is golden brown, about 1 to 2 minutes. Allow to cool for 5 minutes before slicing into 8 pieces.

For side dishes we usually have pine nut couscous, chickpea or cannelloni and kidney bean salad (olive oil, white balsamic, onion, oregano, and lemon juice), mexican rice and black beans (not totally healthy, but yummy), and sometimes sauteed green beans with garlic and oil. Our main side dishes seem to be lettuce salad, or the Alexia brand fries and onion rings, which are all natural and have no preservatives. I'm branching out tomorrow and making a eggplant, zucchini, and yellow squash sauteed medley.

Escarole & beans in chicken broth & garlic
Brown rice
grilled eggplant - brush with olive oil (very lightly) & garlic.
Sweet potatos baked
Fresh Spinach sauteed lightly in garlic & olive oil.
Yes i like Garlic thank god it doesnt stay on me hahahahahaha
