Something easy for dinner

Something easy for dinner

I am not much of a cook, yet (I hope to be). I still have not unpacked our pots from my shower. I really want to start cooking dinner more often. Since I work from 6 am till 7 pm, I need something easy. Are there any good quick recipes? Maybe even healthy quick recipes I could make?

Turkey chili? You can really add whatever you want to it! I usually do some sort of combination of the following:

ground turkey
1 diced onion
black beans
kidney beans
chick peas
diced tomatoes w/ chilis
tomato paste
chili powder
cayenne pepper

I enjoy dinners that can be cooked all in one pot! Less clean-up that way!

Honestly, when I started cooking and even now when I am busy I really looked for help in the kitchen.

In the frozen aisle there are these Bird's Eye bags with vegetables and sauce and you just add chicken. You can start with that.

Last night I made some 'Chicken Helper' (like Hamburger Helper). It was so yummy!

Then I make stuff from scratch when I have more time and I can get to the store.

You can always cheat and use an instant type side dish like Pasta Sides from Lipton/Knorr or boil in bag rice something if you need a quick meal--or just a side of steamed veggies

as a main dish--this is good and low fat!

boneless skinless chicken breast
Italian dressing or any type of vinegarette you like(wishbone is a good one to use)
some parmesean cheese
fresh minced garlic

take 4 or 5 pieces of chicken breast---and pour salad dressing in a ziplock or any type of resealable bag...sprinkle some parmesean cheese, and a spoonful or so of minced garlic (its okay if you don't have this) and add the chicken and shake around to ensure its coating all over the chicken. i personally like to season the chicken with some seasonings like adobo first.

let it sit and marinate for as long as you can--can be a few minutes or few hours. then put it in a baking dish like 13'x9' and bake at like 350 for 20-25 min. until juices run clear.

sorry i'm not putting measurerments and stuff-this is one of those ones that i have done for awhile and do by heart

chicken/turkey stir fry is quick & easy! and healthy! I make it often, it's dh & my favorite.

Chicken/turkey cutlets cut into pieces.
start cooking them in a pan
after a few minutes add a bad of frozen veggies..whatever kind you like.
then add some sauce..i usually use teryaki or make my own with worschester/bbq sauce/hot suace

I run into the same problem, I get home at 6:00 and I don't want to eat past 8:00 or earlier, so I have to make something that is quick.

I prepare for the week by sometimes making stuffed sheels or lasagna and freezing them. All DH has to do when he gets home is pop it in the oven and it's done in like 20 minutes. :)

I also like to make sausage and instant potatoes with slices of tomato.

If you can make the rice the night before, or just use instant rice, you can put togehter some left over grilled chicken, or cooked chicken, and add that to rice, with a can of cream of mushroom soup and some veggies, and just heat until warm. :) I love when my mom makes that.

When you eat it, it doesn't taste like 'italian dressing' at all. It's mostly the spices and stuff in the dressing that add to the flavor. The garlic , and whatever else is in it. It just gives the chciken a really nice flavor. A tiny bit tangy, but it depends on how much you use.

i'm always working late and hate that we eat 8:30ish

we buy those salad kits...et ceaser or something....we just add shrimp or chix, sundried tomatoes and red onions...if we're extra hungry we'll heat up frozen baked clams as a side.

do you eat fish? It's always an easy quick entree

we love the salmon pinwheels stuffed with crabmeat....20 minutes in the oven and you're done!

Oh MJ that sounds good! We do something similar - add spices to chicken, olive oil and lemon and bake in the oven. Serve with a side of frozen veggies or fresh veggies. I decided to start baking and freezing things too - I have three dinners frozen for future.

We do the shrimp stirfry in a bag too when we are rushing and a lot of canned soups and salads. Its hard because I don't get home till 6:30 and we got to the gym so dh tries to have everything ready to go.

Congrats on the wedding btw!

You know what so easy.....tacos! I mean granted you have to get the shells, sour cream, salsa etc...but you just brown the meat and everything else is premade and just needs to be bought

Re: Something easy for dinner

I thought of another idea. Do you have a crockpot? You can throw something in in the morning and it'll be done by the time you get home.

Re: Something easy for dinner

My mom makes this amazing recipe as of late.
she just cooks some penne pasta, and then adds a small jar of pesto, or as much as you like. Then she cooks up some sausages and cuts them into pieces and adds them to the pasta. I tell you, this is so easy, and it is SOOOO goood!!!!! I beg for her to make it for me whenever I am over.

I am also not a big pesto fan, but this is fantastic.
