Stuffed peppers, but not with meat?

Do you ever stuff them with anything else? I hate eating cute animals. Maybe a rice type thing?

I like them with white rice, chopped meat and sauce. Do you like Stove Top stuffing by any chance? I think I remember my mother making them that way in the past, but I liked them better the other way. Either that, or make your own stuffing.

So, like, what do I put in it? Just take a random pepper and put rice and beans in it?

I have made the pepper stuffing with rice, beans and salsa and then thrown some pepper jack cheese on top.

I have a vegetarian friend, and when i made my stuffed peppers with chopped meat, red sauce, tomatoes and rice, I would make hers with shredded zucchini, shredded carrots, rice, tomatoes and sauce. . I'd throw in some parmesan and garlic and what not too.

mmmmmmmm. love stuffed peppers.

Mmm that sounds good too! They all sound good. I might have to run and get peppers on my way home.

You bake these in the oven?

Yes! Good thing about only using veggies, just cook it until its tender enough for you and warm- you don't have to worry about undercooking meat or anything haha.

I think I want to make stuffed peppers now!

i put 1 lb chop meat, 1 and half cups cooked brown rice, can 15 oz black beans, 1 15 oz can tomato paste, half pack of mccormick taco seasoning, and an onion.

It made 8 peppers. You can just up the rice, delete the meat. you can add corn or cheese too if you wanted to.

Then i baked them at 350 until the peppers were tender. I covered each pepper w/ foil so it didnt dry out on top.

They freeze well too.

morningstar farms makes these 'beef crumbles' that are soy based and meatless- they are really yummy- those would work good I think- I would even mix in the morning star italian sausages with the soy crumbles

Re: Stuffed peppers, but not with meat?

Ok should the peppers just be sitting in the dish, or should they be sitting in sauce on the dish?

ChristineAaron08 Posted:

Re: Stuffed peppers, but not with meat?

i put them in a baking dish w/ foil and spray some cooking spray just in case. It has to be a dish w/ sides though or they slide all over.

no sauce b/c the pepper will get too soft on the bottom. I think some people do put sauce though.

Re: Stuffed peppers, but not with meat?

here's a recipe I found for vegetarian stuffed peppers, you can really put anything you want in it

STUFFED PEPPERS VEGETARIAN

6 med. green peppers
2 c. cooked rice
1 lg. egg, slightly beaten or 1/4 c. Eggbeaters
1 c. chopped onion
1 sm. can tomatoes or 1 (10 oz.) can Rotel tomatoes
1 tbsp. vegetable oil
1 c. bread crumbs or wheat germ
1 1/4 c. grated Cheddar cheese

Cut off tops of peppers and remove and discard seeds. Dice tops, discarding stems, and mix all ingredients, reserving 1/2 cup cheese. Stuff peppers and place in a round microwave casserole. Put extra filling around peppers. Peppers should fit tightly. Cover with plastic wrap, piercing 4-5 times for vents. Microwave on High 15 minutes. Sprinkle with reserved cheese. Cover; let stand 2-3 minutes. Then serve. This dish can be made ahead and frozen for later use. Do not cook until after thawed.
