Super Easy Receipt Alert!!
Made this last night---and it went over very well with DH--and its beyond easy and you can use it in a clutch as you usually have all these items in your kitchen all the time!
Garlic Chicken
2 teaspoons crushed garlic
1/4 cup olive oil
1/2 cup dry bread crumbs
1/2 cup grated Parmesan cheese
4 skinless, boneless chicken breast halves
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C).
Warm the garlic and olive oil to blend the flavors. Placing in a small frying pan and heating on low is enough!
In a separate dish, combine the bread crumbs and Parmesan cheese. Dip the chicken breasts in the olive oil and garlic mixture, then into the bread crumb mixture. Place in a shallow baking dish.
Drizzle remaining garlic/oil mix over chicken. Bake in the preheated oven for 30 to 35 minutes, until no longer pink and juices run clear.
***I seasoned the chicken with a little Adobo just cause--i always do that.
And before I put the chicken in the pan--I sprinkled a thin layer of breadcrumbs on the bottom. Instead of just olive oil, I melted butter with it as well--so thicken up the flavor. Dipped the chicken in flour first, then the butter/garlic and then the breadcrumbs. Added some oregano, garlic powder, black pepper, salt, and parsley to the bread crumb mixture. (You can just by italian seasoned bread crumbs). Also I used more garlic--cause I freaking love garlic.
Then the best part---I put the chicken on Broil the last 5 min., and it gave the chicken a nice crispy crust...and the layer on the bottom became garlic buttery and yummy!
