*SUPER EASY shrimp scampi recipe (takes less than 30 minutes!)

Easiest shrimp scampi recipe EVER!

This is one of those recipes that you don't really need to measure out since the ingredients are SO basic. It's really fool proof!

You'll need:

1 lb shrimp (peeled, deveined, tails on)
1/2 cup butter (that's one stick)
1 tbsp. dijon mustard
1.5 tsp. fresh lemon juice
1.5 tsp. chopped garlic
1.5 tsp. chopped fresh parsley

Preheat oven to 450.

You can probably finish the rest of the preparation before the oven is heated!

In small saucepan over medium heat, add all ingredients except for shrimp. Place shrimp in shallow baking dish. When butter has melted, pour mixture over shrimp and bake in preheated oven for 10-12 minutes (until shrimp are pink). ENJOY!

I served this tonight with cous cous... and next time I'll probably get some nice bread for dipping into the sauce!
