I am doing a mexican dinner tonight, soft and hard shell taco's, enchilladas, and dip, you take cream cheese spread it in the bottom of the pan, cover it with cheddar cheese, put in oven just enough to melt the cheese then pour corn, black bean salsa over it, and serve w/ tortilla chips. I felt like doing something fun tonight. what are you all making?

We are moving on Friday and I made sure one of the first things I had packed was my kitchen. DH got spoiled because I cook every evening, but I need a break while I pack up the rest of the place.

I picked up a rotisserie chicken form Fireside and we're having baked sweet potatoes and sauteed mushrooms w/garlic with it. I made it an easy night for myself because....I have TY cards to write lol !!!

I made a pot roast, with spinach and asparagus. I also made a shrimp fried rice to go with it and home made gravy! I have alot of time on my hands since im not working right now! lol
