this week's dinners.. (with a super easy recipe!)

so here's what we're eating for dinner this week -- (if some look like repeats from last week... its just because we ended up making a few changes when silly me forgot to take the meat/chicken out of the freezer!)

TODAY -- cellentani pasta with tomatoes and mozzarella (recipe on the bottom!)
MONDAY -- chili lime chicken over salad
TUESDAY -- spicy shrimp with corn & quesadillas
WEDNESDAY -- chicken with burst tomatoes & chive gnocchi
THURSDAY -- meatloaf muffins with rice
FRIDAY -- whole wheat veggie pizza
SATURDAY -- steak with pico de gallo & rice

RECIPE!
cellentani pasta (you can use fusilli or another type of pasta if you prefer!) with tomatoes & mozzarella.

you'll need:
2 cups of cellentani pasta
2 cups of small broccoli florets
2 tbsp. olive oil
2 tbsp. rice vinegar
6 sundried tomatoes, chopped
1 clove garlic, minced
2 cups of tomatoes, diced
1 cup mozzarella cheese, diced (i like to use marinated mozzarella)
salt & pepper to taste
basil -- coarsely chopped (optional)

this recipe is SUPER easy!

--bring a large pot of lightly salted water to a boil
--add pasta, cook as directed on package
--stir in broccoli in the last minute or so of cooking time
--drain pasta and broccoli

while that's cooking... whisk together the oil, vinegar, sun-dried tomatoes, garlic, salt, and pepper in a large bowl
--add tomatoes, mozzarella cheese, and pasta/broccoli
--mix to coat.... and sprinkle with basil

and i like to top it with fresh grated parmigiano reggiano
