Sweet Potato Souffle
INGREDIENTS 3 cups mashed sweet potatoes (or you can use canned ones-YUMMY still) 3/4 cup white sugar 1/3 cup butter, softened 2 eggs 1 teaspoon vanilla extract 1/2 cup milk 1 cup flaked coconut 1/3 cup all-purpose flour 1 cup packed brown sugar 1 cup chopped walnuts 1/3 cup melted butter
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Combine the mashed sweet potatoes with the white sugar, soft butter or margarine, beaten eggs, vanilla and milk. Spoon into a 2 quart oven proof baking dish.
Combine the coconut, flour, brown sugar, chopped nuts and melted butter. Sprinkle over the top of the sweet potatoes.
Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes.
*NOTE* i usually take the nuts out of the topping because I am allergic to all nuts except peanuts and almonds for some reason. It tastes great anyway.

Re: Turkey Day Recipes...
not very turkey day, but Poles require soup before every meal... so next time:
french onion soup
4 very large onion-sliced thin olive oil salt water gruyere stale french bread, sliced
fry the onions in oil with about 1 T salt slowly on low-med heat in an 8 liter (or 8 qt) pot. Stir every 3-5 min or so. Avoid charring edges... if it's starting, turn down the heat and stir more often. Onions will gradually shrink up and turn a caramelized brown over a period of 30-45 minutes. You want golden bits to stick to the pot, but avoid having them burn
Add about 3L (3 qts) water, and scrape off all the bits from the pan. Raise the heat to med, and bring to a simmer. Add salt to taste and let perk on the stove for another 20 min.
trim the rind from the cheese, and grate in the food processor. Toast the bread lightly.
Put the bread and cheese in the bottom of the individual bowls, and ladel the soup on top.... bon appetit

Re: Turkey Day Recipes...
i LOOOOOOOOOOOVE anything cranberry - here's a VERY simple recipe!
Ingredients: 1 12 oz. bag cranberries 1 cup sugar 1 cup water
Directions: 1. Pour one 12 oz. bag of cranberries into a colander. Rinse well with cold water, then sort out any stems or soft berries. (Frozen cranberries can be used as well; you don’t need to thaw them before using.)
2. Combine 1 cup sugar and 1 cup water in a medium saucepan. Bring the mixture to a boil, then carefully stir in cranberries. Return the mixture to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.
3. Pour the cranberry mixture into a heat-proof bowl. Cover with plastic wrap and let stand until cooled completely, 2-3 hours. The mixture with thicken as it cools. Store sauce in refrigerator until ready to serve.

Re: Turkey Day Recipes...
ok.....REALLY REALLY GOOD QUICK APP.
You'll need: Aluoette Garlic and Herb Cheese spread Salami preztel sticks (small ones) sun dried tomatoes- sliced ones
spread the cheese spread on the salami, place about 3 sundried tomatoes on top of the cheese....place preztel stick on the edge of one side...and roll!!!
SO FREAKIN GOOD!!
make them about a half hour before guests arrive and don't refrigerate b/c they become a little soggy.
also there is a really good artichoke recipe on the back on liptons onion mix that I'm making.

Re: Turkey Day Recipes...
That Alouette cheese is also REALLY good for making stuffed mushrooms. Buy a package of whole white mushrooms, clean thoroughly, remove the stems, then spread the cheese inside the mushroom cap. Cover with a sprinkling of breadcrumbs and wrap each mushroom in tinfoil. Just throw 'em in the oven til they're hot - soooo good!
