what are you making for thanksgiving?

Original post by MikeandJess

I'm in charge of desserts so I made a key lime pie and a pumpkin pie last night and the house smelled so good. I love the holidays! Tonight I take on the battle of the pecan pie and possible a red velvet cake. What are you all making/baking/cooking for thanksgiving?

I went last night and it wasn't so bad. I have to get dairy free whipped topping which I can only find in a supermarket in new hyde park and I am dreading going today.

RECIPE INGREDIENTS:
Cupcake
Chocolate frosting
3 oval shortbread cookies (we used Keebler Sandies Right Bites Shortbread)
6 to 10 candy corn pieces
White icing
Black decorators' gel
Red fruit leather (we used strawberry Fruit by the Foot)
1. Frost the cupcake, then press in a cookie head and 2 cookie wings.

2. Press in a row or two of candy corn tail feathers.

3. To make an eye, add a small dot of white icing to the head, then add a dot of black decorators' gel for a pupil.

4. For a beak, cut the white tip from a piece of candy corn and press it in place.

5. To make the wattle, cut a 1-inch square of fruit leather. Roll it into a tube and stick it in place over the beak.

AWESOME, thanks!!! I wonder if I'll have time to do these for tomorrow! I would love to, but I wonder if they will take too long (and I would have to do a supermarket run tonight that I don't really have time for, but they just look SO FREAKING CUTE!!!!!!!!)

I am so jealous of you all! I dont have my own oven! I can make crazy stuff for me and DH in the toaster oven or in a pinch I will run down and use my mom's oven. BUT my mom asked that I stay away from her oven bc she has so much to make the next few days.

I searched high and low for something to make on the stovetop and finally came up with a brocolli and cheese dip that you serve in a round loaf of bread. I love it but I wish I could do something more!

I am making pumpkin muffins tonight. It's my Aunt Rita's recipe, who passed away when I was ... 9 I think? I've been making them for Thankgiving dinner for about 7 years now I think. They are delicious but never as good as hers were.

Oh and I just remembered - my aunt is making empanadas too!

And if I can find all the right items, I will try to make those turkey cupcakes cuz they are just too awesome!!!!!!! (I was going to make cupcakes anyway!)

We were originally going to have it at our place, but plans changed. My parents went ahead and booked a nice restaurant this year! My inlaws are going to be in the same town this year too, so its going to be cake! Im going to bake some cookies to bring.

Kickin' Cranberry Sauce

PER SERVING (1/3 cup): 63 calories, 1g fat, 20mg sodium, 13g carbs, 2g fiber, 8.5g sugars, 1g protein -- POINTS® value 1*

Dab or pile this stuff on top of your turkey. Or just eat it plain! (There’s so much good fruit in here, we wouldn’t blame you.) P.S. For quick day-of assembly, start this off the day before...

Ingredients:
One 12-oz. bag whole cranberries
One 11-oz. can mandarin orange segments in their own juice
1 cup peeled and finely chopped apples
1 envelope (1/4 oz.) dry unflavored gelatin
2/3 cup Splenda No Calorie Sweetener (granulated)
1/4 cup Almond Accents in Original Oven Roasted
1/4 cup granulated white sugar
1/8 tsp. cinnamon

Directions:
In a medium pot, combine cranberries, Splenda, and sugar with 1 3/4 cups water. Set stove to medium heat, cover pot, and bring to a boil.

Once boiling, reduce to a simmer and continue to cook for 10 minutes, uncovering to stir occasionally. Meanwhile, in a small dish, combine gelatin with 1/4 cup cold water, stir well and set aside.

Turn off heat and stir in gelatin mixture, stirring until dissolved and thoroughly combined. Stir in cinnamon and apples and mix well. Transfer mixture to a bowl, and refrigerate for at least 5 hours (overnight is best).

Once chilled and set, remove mixture from the fridge and give it a good stir. Drain juice from the can of orange segments. Roughly chop orange segments and drain any excess liquid from them. Slightly crush almonds so that they break into smaller pieces. Add chopped orange segments and almond pieces to the cranberry sauce, and mix thoroughly. Serve with lean turkey, pork, or chicken, or anything else you like cranberries with!

MAKES 12 SERVINGS
