What do you usually eat for dinner on weekdays (when you don't go out) and who makes it?
I need ideas, please.
DH usually makes dinner. We always eat a salad. Sometimes he makes grilled chicken and sometimes burgers to accomany the salad.
We eat so late (about 9pm), that I feel guilty eating anything other than a salad, but I'm beginning to get tired of the same thing every day.

Re: What do you eat for dinner?
We eat late everynight except for weekends-it depends on how we both feel, sometimes chicken, burgers, steaks, tacos...with 'real' meals we always have salad. DH does all the cooking and I clean up, I hate to cook
One of my favorties-bow ties pasta, peas, alfredo sauce and bruschetta all in one pan-mmMMM its good.
Sundays he will cook sauce-and we will have that 2 nights a week.

Re: What do you eat for dinner?
I've been really trying to make dinner at home more than eat out now that we are trying to save for a house. There are some great recipes in the Everyday Food magazine. I don't know if you both eat fish/shellfish, but the other night I did grilled shrimp (stovetop grill pan) and couscous w/ roasted veggies. Everything cooks pretty fast, so it's a good option for after work. Also a lot of pasta dishes come together pretty quickly.

Re: What do you eat for dinner?
Most of the time I make easy chicken breast recipes - one skillet meals.
chicken francese chicken marsala orange chicken chicken parmigiana marinated chicken dipped in potato flakes* i made this up the other day!!! YUM!
with chopped meat i make chili or tacos
For sides I make: couscous mashed potatoes mac and cheese ( sometimes i use the box, but sometimes from scratch ) Jen taught me how to make asparagus potatoes rice pasta
and I always have a salad on the side and sometimes those Pillsbury biscuits or crossaints
I also use my Griddler every single week, love that thing!

don't get in a rut!
have you checked out the 'official recipe thread?'
there are so many choices!
Chicken.. -chicken picatta -chicken francese -grilled chicken in a pita with cucumber/feta/red onion salad -chicken marsala -chicken cordon bleu -chicken saltimbocca
Side dishes... -stuffed mushrooms -white or yellow rice -steamed broccoli -lemony broccolini -sauteed mushrooms -sauteed snap peas & onions -couscous with scallions & lemon zest -sauteed peppers & onions
if you're stuck on salads... throw some grilled chicken, grilled shrimp, or grilled salmon on top! and mix up your salad ingredients.. try mixed greens or romaine, carrots, cherry tomatoes, avocado, cubed cheese, scallions, red onion, corn, broccoli, artichoke hearts, peas, edamame, etc!
i have so many ideas! definitely check out the food network website... i love giada's recipes, they're my faves! and rachael ray has some pretty good ones too

Re: What do you eat for dinner?
Our 'staple' meals for the week are:
lean ground beef extra lean turkey turkey sausage (Hot) chicken cutlets flank stank center cut pork chops tilapia
There are different ways to mix and match them with different veggies. Fresh spinach, Asparagus, roasted peppers etc. Oh and don't forget 'spuds' my DH is an Irishman. :)
We also eat a lot of salads so I usually throw in some avocado and chopped almonds.

Re: What do you eat for dinner?
Thanks
But when do you guys have the time to make this?
We get home from work at 8:30pm and eat at 9pm. I can't imagine eating pasta at 9pm (I've already gained 6 pounds since my November wedding, and DH has gained 8 pounds)

we don't usually eat this late, but when we do it is usually just a steak and salad.
Crock pots are also a really good invention!

Re: What do you eat for dinner?
Maybe try eating more protein oriented food and pasta isnt terrible for you if its not evrday. try wheata pasta. My easiest fix is penne wheat pasta, bruschetta, black olives, peccorino romano shredded cheese and chicken all in one pan. its quick and tastes great.

I am usually done in a half hour but ALWAYS done in less than an hour. We eat late because DH gets home after 9PM.
I heard it was a myth that if you eat late you gain weight. . . I gained weight when we were eating earlier and I am losing it now! LOL
Have you ever tried making a few meals on the weekends and then just heating them up during hte week? I would definitely do this but we dont have an oven!

Re: What do you eat for dinner?
DH usually cooks and I clean up. He makes pierogies, tacos, chili. Twice a week I'll cook; usually make pasta with parma rosa sauce or garlic & herb sauce. Or I'll make stuffed rigatoni-that's one of our favorites and they cook so fast.
Made a great salad last week with all different greens, grape tomatoes, black olives & fresh mozzarella balls. Had balsamic vinaigrette dressing with it. Yummy!!

Re: What do you eat for dinner?
I hear ya. we're on a chicken breast kick right now to up our protein and lose weight. We cook it on our griddler (love it!) or in the pan with lots of seasonings and sometimes low fat cheese. I'll usually have salsa on the side as a condiment, since that's always low fat. Sunday nights though, I will usually make a big dish that we can have left overs from for a few nights which helps since we get home so late.

Re: What do you eat for dinner?
Here's a few of our quick standbys:
Steak tips: Cut them in chunks, marinate in terriaki sauce and stir fry.
Chicken breasts : Marinate in balsamic vinegar, chopped garlic, red pepper flakes, salt & pepper. Grill or saute.
Fish Filets: Chop a shallot or small red onion and put it in a lightly greased baking dish. Season fish with a small amount of olive oil, salt and pepper and put on top of shallot. Bake at 350 for 8-10 minutes or until the fish is flaky. Top cooked fish with a little butter, chopped parsley and grated lemon zest.

Re: What do you eat for dinner?
I usually cook 3 meals on sunday and leave them in the fridge to heat up after work, cutting down on prep time.
We make a big bowl of salad that last 3 - 4 days.
I usually make foods that improve with time - i.e. chili, taco meat, meatloaf, stuffed pork cutlets, baked chicken, chicken pot pie with no pie crust (just the meat and veggies in a sauce), etc. If I know we will have grilled chicken or grilled pork or fish, I will make the sides on the weekend and then just grill up the meat which is quick for the weekday.
